La Favorite is the last distillery in Martinique to operate entirely on steam power (since 1906), an unforgettable experience for all who have visited during distillation season.
Since 1905, the estate and its sugar mill have been owned by the Dormoy family, who transformed it into an agricultural rum distillery. The distillery has been partially modernised but remains one of the most traditional on the island. It is currently run by Paul and Franck, respectively of the third and fourth generations, at the helm of one of the last independent family distilleries in Martinique.
Another distinctive feature is that it sources only hand-cut sugarcane, topped and de-leafed in full length, unlike machines that cut them into small segments. A costlier practice, but one that keeps the cane fresher and avoids damaging the parcels. Its white rums are said to be the gentlest in the AOC, likely owing to the lengthy fermentation before bottling.
