Sancerre Osmoze 2024 from Domaine Denizot is the entry point into the world of Thibauld and Jennifer Denizot, and as often happens with conscientious vignerons, this "entry" already speaks volumes about the house. Revue du Vin de France awarded it their heart's pick: "This Sancerre, worked with precision, reveals an exact and savory expression of the cépage, free of all exuberance. We salute the fine definition of this wine from a domaine currently in excellent form." A 100 percent Sauvignon Blanc, born from a mosaic of calcaire terroirs that weaves the diversity and complexity of the appellation into a single glass.

Terroir and Vineyard

The Osmoze cuvée is assembled from four villages, Amigny, Chavignol, Sancerre, and Verdigny, on soils of Caillottes, the fragile white Portlandian limestone stones of the Sancerrois. These Caillottes crackle underfoot like sugar and are one of three emblematic soil types of the region. Their light and well-draining composition gives Sauvignon Blanc a delicate, floral expression and immediately recognizable mineral freshness. Domaine Denizot comprises 18 hectares on the Sancerre appellation, located in the commune of Verdigny. Production is 75 percent white. Viticulture at the domaine is reasoned and near-organic: no insecticides, acaricides, anti-rot agents, or herbicides. Vines are pruned in poussard Guyot, respecting sap flow. Harvest is by hand. Vinification is precise and non-interventionist: long and gentle pneumatic pressing, gravity movement of juices or slow pumping, severe settling, fermentation in concrete and stainless steel vats, ageing on fine lees. The concrete vat allows aeration of the juices for greater maturity in the finished wines.

Tasting Profile

A Sauvignon with rich and intense fruit, balanced by lovely mineral freshness and sustained by fine tension. The nose opens onto aromas of grapefruit, green lemon, white peach, and white flowers, with a discreet mineral touch. The character of the different terroirs emerges on the palate, with calcaire notes creating a beautiful mineral frame. The wine is lively, direct, and precise in the mouth, carried by measured acidity and a saline, persistent finish. A crystalline profile with mineral tension and saline freshness. A Sancerre that unites immediate pleasure with fine capacity to evolve over four to six years.

Thibauld and Jennifer Denizot practice a conscious viticulture, respectful of terroir. Their wines, white, rosé, or red, speak with precision, transparency, and elegance. They represent a generation of engaged Sancerre vignerons, far from industrial Sancerres and maximized yields. They have chosen parcel rigor, constant vine care, and absolute respect for fruit in the cellar. The domaine's range includes several ambitious parcel-specific cuvées, Bouffants, Damoclès, Côte de l'Épée, and Monts Damnés, with Osmoze as the most accessible and consistent entry point.

Food Pairing

This Sancerre Osmoze pairs beautifully with fine de claire oysters, a plateau of shellfish, quality sushi and sashimi, bar tartare with fresh herbs, steamed scallops, grilled fish with beurre blanc, or lobster salad with citrus. It also finds classic harmony with aged Crottin de Chavignol, a pairing rooted in terroir, or fresh goat cheese with herbs. Served well chilled between 8 and 10 degrees Celsius, it reveals all the freshness, precision, and calcaire minerality of an authentic and sincere Sancerre.
