Champagne Téthys Blancs de Blancs Grand Cru, Guiborat
Drawn from the mythic terroirs of Cramant, Oiry and Chouilly, Champagne Téthys Blancs de Blancs Grand Cru embodies the purest and most mineral reading of the Guiborat domaine. The family Sébastien and Joël Guiborat continues its work of high precision here: respectful viticulture, careful observation of chalky soils, ripe harvesting always with freshness in mind, and vinifications of great restraint to let the Chardonnay speak without artifice.
Téthys comes exclusively from parcels classified Grand Cru, some over 50 years old, deeply rooted in the compact chalk of the Côte des Blancs. Fermentation takes place in stainless steel to preserve the crystalline expression of the grape, followed by extended ageing on lees that brings relief and texture without weighing down the wine. The Guiborat style emerges immediately: a Blanc de Blancs that is straight, saline, brisk and perfectly sculpted by chalk.
The nose evokes orange blossom, damp chalk, green apple and a hint of crystallised citrus. The palate, tense and luminous, unfolds a fine, almost tactile matter where minerality dominates before a long, soaring finish, very pure, the signature of great Chardonnay from Cramant.
Food and service: ideal with sashimi, shellfish, scallop carpaccio or lightly aged soft cheese. Serve around 9°C. Ageing potential: 5 to 10 years, with a profile that gains amplitude while retaining its mineral finesse.
