Champagne Prisme.20 Blancs de Blancs Grand Cru – Guiborat
The Guiborat domaine, based in Cramant at the heart of the Côte des Blancs, has crafted Prisme.20 as one of its most sought-after cuvées. This Grand Cru blanc de blancs draws exclusively from old Chardonnay vines planted on the chalky terroirs of Cramant, Chouilly and Oiry, regions universally recognised for producing some of Champagne's purest and most vibrant Chardonnays. The work of Sébastien and Joël Guiborat is defined by precise viticulture, deep respect for the plant and soil, and restrained winemaking aimed at expressing the truth of the vintage and terroir without artifice.
Prisme.20 blends mainly the 2020 vintage with a perpetual reserve that adds complexity and texture. Vinification takes place in tank to preserve the brightness of the fruit, followed by long ageing on lees in bottle to gain depth without losing the saline rectitude that marks the domaine. The style is clear: a sculpted Chardonnay, taut and of great aromatic purity, carried by fine bubbles and pronounced mineral energy.
The nose suggests preserved lemon, damp chalk, white flowers and a hint of almond paste. The palate, straight and lifted, combines chalky tension, aromatic precision and a long, vibrant finish with an almost iodised character. This is a cuvée made for lovers of pure, unadorned blanc de blancs.
Food pairing and service: superb with oysters, sea bream ceviche, sea bass tartare or delicate poultry. Serve around 9°C. Cellaring potential: 5 to 8 years to gain complexity while retaining the signature Guiborat freshness.
