Champagne Prisme.20 Blancs de Blancs Grand Cru, Guiborat

The Guiborat domaine, based in Cramant at the heart of the Côte des Blancs, has created with Prisme.20 one of its most sought-after cuvées. This Grand Cru Blanc de Blancs comes exclusively from old-vine Chardonnay planted on the chalky terroirs of Cramant, Chouilly and Oiry, zones unanimously recognised for producing some of Champagne's purest and most vibrant Chardonnays. The work of the Guiborat family, Sébastien and Joël, is characterised by precision viticulture, profound respect for the vine and soils, and sparing vinifications aimed at expressing without embellishment the truth of the vintage and the chalk.

Prisme.20 blends primarily the 2020 vintage, supplemented by a perpetual reserve that brings complexity and texture. Vinification takes place in tanks to preserve the brightness of the fruit, followed by long ageing on lees in bottle to gain depth without losing the saline rectitude typical of the domaine. The style is clear: a chiselled, taut Chardonnay of great aromatic purity, carried by fine effervescence and pronounced mineral energy.

The nose evokes candied lemon, damp chalk, white flower and a touch of almond paste. The palate, straight and slender, combines chalky tension, aromatic precision and a long, vibrant finish, almost iodine-tinged. This is a cuvée crafted for lovers of pure-expression great Blancs de Blancs, without artifice.

Food pairing and service: perfect with oysters, gilt-head bream ceviche, sea bass tartare or delicate poultry. Serve around 9°C. Cellaring potential: 5 to 8 years to gain complexity whilst retaining the freshness signature of Guiborat.
