Domaine Les Monts Fournois pursues an exacting and parcel-based reading of Champagne, driven by a desire to reveal with precision the identity of each cru, in the manner of the Bérèche family behind the project. Based in Ludes, the domaine tends its vines with rigour and sensitivity, privileging practices that respect the living world so as to preserve the pure expression of the soils and the natural vibration of the grapes. Each cuvée is conceived as a faithful interpretation of a place.

This cuvée from the Grand Cru of Chouilly honours one of the greatest terroirs of the Côte des Blancs, renowned for the nobility of its Chardonnays. The chalky soils, of great purity, bring tension, salinity and length. Vinification is precise and minimally interventionist, seeking to preserve all the aromatic finesse and verticality characteristic of the cru, with careful ageing that structures the wine without masking its origin.

The nose opens on delicate notes of fresh citrus, lemon zest and white flowers, accompanied by a subtle chalky touch. On the palate, the attack is straight and soaring, carried by a fine bubble and a sculpted texture. The finish, long and saline, underlines the emblematic minerality of Chouilly and leaves an impression of great purity.

A Champagne for gastronomy, ideal as a refined aperitif but also with oysters, hand-dived scallop carpaccio or a noble fish simply grilled. It can be enjoyed now for its brilliant precision or evolve over a few years in the cellar to gain further complexity and depth.
