Domaine Les Monts Fournois pursues through its parcel-based cuvées an exacting reading of Champagne's greatest terroirs, with particular attention given to the identity of each cru. Work in the vineyard privileges respectful and precise practices, to reveal the natural energy of the fruit and the depth of the soils. In the cellar, vinifications are conducted with restraint and exactitude, in a constant search for balance between tension, maturity and expression of place.
This cuvée from the Grand Cru of Verzenay, on the Montagne de Reims, brings to light the nobility of Pinot Noir on chalky soils mixed with sand and clay. The 2013 vintage, marked by slow maturity and fine natural acidity, offers a sculpted, structured profile particularly suited to ageing. Careful maturation underlines the depth of the cru without compromising its purity.
The nose reveals aromas of fresh red fruits, cherry and redcurrant, accompanied by lightly toasted notes, brioche and fine spice. On the palate, the attack is ample yet held perfectly by a straight, energetic acid line. The bubble, fine and persistent, sustains a dense and precise texture. The finish, long and saline, expresses all the refined power and chalky minerality of Verzenay.
A Champagne of character and fine dining, ideal with roasted squab, veal fillet or mushroom risotto. Already expressive, it will gain further complexity after additional years in the cellar.
