Maury Ambré Hors d'Âge from Terres de Fagayra ranks among the most singular and rarest natural sweet wines of Roussillon — a timeless bottle shaped by decades of oxidative ageing on the wildest schist slopes of the Maury appellation. Rated 96/100 by Bettane & Desseauve, who praise Stéphane and Marjorie Gallet as "exceptionally gifted proprietors of Roc des Anges" exploring "with passion the world of natural sweet wines" to create "one of Maury's finest expressions," this wine invites you into one of France's oldest and most enchanting winemaking traditions.

The domaine and terroir

Terres de Fagayra is the second domaine of Stéphane and Marjorie Gallet, founders of the celebrated Roc des Anges in Maury. After leaving Mas Amiel, Stéphane established his own project and immediately produced some of the appellation's most original and accomplished natural sweet wines. Their philosophy mirrors that of their flagship domaine: certified organic and biodynamic viticulture, hand-harvesting, indigenous yeasts, and absolute respect for Maury's schist terroir. Vines are planted on marly schist and calceous schist soils, a deep and sparse substrate that forces old vines — averaging 66 years — to dig far into the rock for sustenance, concentrating aroma and substance. Grenache Gris and Maccabeu, historic Catalan varieties, are made in the traditional mutage style — fermentation arrested by adding neutral spirit to preserve natural sugars — then aged for years in old oak foudres, acquiring their distinctive copper-amber colour and rare aromatic complexity.

On the palate

The colour is a deep amber with copper reflections, luminous and dense, announcing the richness and nobility of the wine. The nose is bewitching in its rarity of expression: notes of dried fruits — candied apricot, fig, date — mingle with honey, caramel, walnut and toasted almond, before hints of candied orange peel, soft spices, light tobacco and havana leaf emerge. A gentle whisper of dried herbs and eucalyptus brings freshness to this generous aromatic world. On the palate, the wine is suave, expansive and deeply layered: the sweetness of residual sugar is perfectly balanced by natural acidity and gentle oxidation, giving the wine its tension and length. Toffee, coffee, cocoa and noble rancio aromas unfold with restraint, and the finish is long, fresh and persistent, bearing the delicate, distinguished oxidative signature of the finest Maury Ambré. A wine for contemplation, drinking well until 2050.

The domaine

After honing his craft at Mas Amiel, Stéphane Gallet established Terres de Fagayra with Marjorie in 2008, aiming to produce some of Roussillon's most authentic and precise natural sweet wines. The domaine is farmed under certified organic and biodynamic practices, with natural yields of only 20 hl/ha — a deliberate constraint that concentrates aromatic expression and wine complexity. Each cuvée is a precise exploration of terroir or a particular ageing approach, guided by a winemaker whose talent is unanimously recognised by the finest guides.

Food pairing

This Maury Ambré Hors d'Âge is a wine for gastronomy and meditation. It pairs beautifully with Roquefort and walnut salad with pears, sautéed foie gras with figs, caramelised Tarte Tatin, pear and almond crumble, dark chocolate soufflé or a board of aged hard and blue cheeses — mature Comté, Bleu des Causses, Stilton. Serve lightly chilled around 12–14 °C to reveal the full complexity and depth of its unique oxidative ageing.
