The Saint-Romain 2023 from Domaine Fabien Coche is one of the most engaging and accessible cuvées in the range, and one of the finest demonstrations that a Chardonnay from the Burgundian arrière-côte can, in the hands of a rigorous vigneron, achieve a freshness, tension and aromatic finesse that make it a wine of immediate pleasure and true personality. Saint-Romain, more chiselled, seduces through its freshness, citrus notes and elegant liveliness.

The terroir and vineyard

Saint-Romain is one of the most secret and confidential villages of the Côte de Beaune, nestled in a natural valley west of Meursault and Auxey-Duresses, at a noticeably higher altitude than its neighbouring hillsides. The calcaire and marly soils of this appellation confer great freshness and distinctive minerality to the wine. This altitude, between 300 and 420 metres, holds the key to the particular character of this Chardonnay: it imposes on the grape a slower, later ripening that preserves the natural acidity of the fruit and gives the wine uncommon vivacity and tension on the Côte de Beaune. The soils, composed of calcaire and white marls, are particularly stony and well-draining, contributing to the citrus minerality and aromatic lightness that characterise Saint-Romain wines. Viticulture is reasoned, moving toward organic certification. Harvest takes place at optimal ripeness. Winemaking is traditional, with 11 months ageing on lees in oak, 20% new.

Tasting profile

The robe is pale yellow with brilliant reflections. The nose is expressive, with notes of white flowers and tart fruits. The palate is well balanced, with good acidity, silky texture and a long, mineral finish. Notes of fresh citrus such as lemon and mandarin mingle with white floral touches. More mineral aspects emerge, evoking flint, alongside white stone fruit nuances. On the palate, vivacity makes the first impression: the natural acidity of Saint-Romain structures a light, precise matière, with silky texture and mineral tension that invites the next glass. The finish is clean, fresh and persistent, driven by the characteristic citrus and chalky return of high-altitude Chardonnays from the Côte de Beaune arrière-côte.

The domaine

Founded in 1940 and formerly known as Coche-Bizouard, Domaine Fabien Coche cultivates the full nobility of great Burgundy wines. Based in Meursault, this family estate comprises 12 hectares of vines spread across Meursault, Pommard, Auxey-Duresses, Monthélie, Saint-Romain, Saint-Aubin and Puligny-Montrachet. Preserving the nature of the soils is one of the producer's principal concerns, who has worked organically for several vintages. The domaine possesses one of the richest arrays of appellations on the Côte de Beaune, through its diversity and accessibility.

Food pairings

This Saint-Romain pairs beautifully with oysters, scallops, steamed fish, fish terrines, asparagus risotto or roasted poultry. It also harmonises well with fresh goat cheese, carpaccio of John Dory with fresh herbs or white asparagus with mousseline sauce. Served between 10 and 12°C, it will reveal all the citrus freshness and chalky minerality of a high-altitude Chardonnay signed with care and precision.
