The Chablis Premier Cru Fourchaume 2023 from Domaine Garnier & Fils is the sunniest and most generous of the first crus in their range — an emblematic cuvée from the largest and most prestigious of the right-bank premier crus of Chablis, whose direct proximity to the Grand Crus of Chablis confers on its wines a depth, richness and ageing potential that make it one of the safest values in the entire appellation.
The terroir of Fourchaume
Fourchaume is the largest premier cru of Chablis, covering around 130 hectares across the communes of Fontenay-près-Chablis and Maligny, in the immediate continuation of the Grand Crus on the right bank of the Serein. Its etymology is striking: the name denotes both a fork, a crossroads, and refers to a darker history, that of the medieval gibbet used to hang thieves in this place. One of its sub-lieux-dits is even called 'L'Homme Mort' — the Dead Man. This troubled history does nothing to taint the nobility of the terroir, quite the opposite. The hillside faces due south to south-west, well protected from northern winds by the ridge, allowing heat to accumulate and giving Fourchaume a precocious and generous character, quite different from the fresher, tenser premier crus of the left bank. The soils are composed of Kimmeridgian limestone over fairly deep reddish-brown clays that drain well, offering Chardonnay regular nourishment and producing wines that are both rich and mineral, sappy and chalky. Domaine Garnier & Fils produces a cuvée aged for 16 months, 60 per cent in oak foudres of 25 hectolitres and 40 per cent in 600-litre demi-muids, with fermentation using indigenous yeasts — precise ageing that brings complexity and depth without ever masking the terroir.
Tasting profile
The colour is a luminous yellow-gold with golden highlights, brilliant and of good density. The nose is immediately rich and seductive: notes of sweet pollen and lemon zest open onto aromas of vetiver, sandalwood and ripe golden fruits — peach, apricot — graced with a light touch of turmeric and sweet spices from the foudre ageing. A chalky and precise minerality comes to structure and balance this generous whole. On the palate, the wine is sappy, full and fleshy, with a silky and generous texture that envelops the palate in lovely richness. The Kimmeridgian tension is immediately perceptible, tracing the mouth with a chalky and saline relief that brings directness and length to a generous substance. The finish is persistent, fresh and taut, with that return of orange zest and sweet spices characteristic of this right-bank terroir. A wine already pleasant in its youth but destined for lovely evolution over six to ten years in the cellar.
The estate
Domaine Garnier & Fils is a family property based in Ligny-le-Châtel, in the northernmost part of the Chablis appellation, run by brothers Jérôme and Xavier Garnier, the first generation to vinify and bottle their own production since 1996. Jérôme tends the vines, Xavier vinifies, and together they have raised the estate to the rank of essential references in the appellation. The domaine is in conversion to certified organic agriculture via Ecocert, with environmentally respectful practices, late harvests to maximise ripeness, and a non-interventionist philosophy in the cellar: indigenous yeasts, long ageing on lees and in foudres, light filtration before bottling without fining.
Food pairings
This Chablis Premier Cru Fourchaume will pair beautifully with lobster grilled with tarragon butter, roasted langoustines, sole meunière, wild turbot in champagne sauce, seared scallops with chive cream or salmon gravlax with fresh herbs. It will also find lovely harmony with creamed chicken breast with wild mushrooms or a soft-paste cheese like Chaource or Brillat-Savarin. Served between 10 and 12°C, with gentle decanting for 20 minutes recommended, it will reveal all the richness, depth and chalky minerality of one of Chablis' finest premier crus.
