Domaine Dominique Gruhier, established in Épineuil in the Tonnerrois, has emerged as one of the major architects of the viticultural renaissance in this northern Burgundy sector. Farmed organically and biodynamically, the vineyard benefits from meticulous and living-respecting work that expresses with clarity the natural freshness and minerality of argilo-calcareous soils rich in Kimmeridgian marls.

The domaine's Crémant de Bourgogne Extra Brut is made by the traditional method, with rigour comparable to that lavished on the house's finest still wines. The grapes are harvested at optimal ripeness to preserve tension and aromatic purity. The restrained dosage in Extra Brut style highlights the wine's directness and allows the terroir identity to shine fully.

The nose opens on fine citrus, fresh apple and white flowers, accompanied by delicate brioche notes from the lees ageing. On the palate, the mousse is fine and persistent, underpinned by a lively and precise frame. The finish is clean and saline, underlining the balance between freshness and gourmandise.

An elegant and energetic Crémant, perfect as an aperitif, with gougères, shellfish or fish carpaccio. Best enjoyed in its youth for its brightness and vibrancy.
