The Eau-de-Vie de Poire du Roulot 50 cl is a confidential production born from the expertise of Jean-Marc Roulot, an emblematic figure of Meursault. While the domaine is globally recognised for its great white Burgundies, Jean-Marc Roulot also perpetuates a family tradition of distillation with a range of artisanal spirits of remarkable precision and purity.
This eau-de-vie is crafted from pears carefully selected for their ripeness and aromatic richness. After fermentation of the fruit, distillation is carried out with the same rigour applied to the domaine's wines, in order to preserve all the finesse and authenticity of the fruit. The result is an eau-de-vie of great aromatic clarity, without heaviness or excess alcohol.
On the nose, it reveals an intense and very pure perfume of fresh pear, evoking the flesh of ripe fruit, with floral nuances and a slightly honeyed touch. The palate is straightforward, elegant and perfectly balanced, offering a silky texture and great aromatic precision. The finish is long, clean and very expressive, leaving behind a beautiful sensation of fresh fruit.
Served slightly chilled, this pear eau-de-vie makes a digestif of great elegance. It can also accompany a pear-based dessert, a sorbet or fruit pastry, or simply be enjoyed alone to appreciate the full purity of Roulot's distillation craft.
