The Eau de Vie de Mirabelle from Distillerie Mazy is one of the most distinctive and compelling productions from this small artisanal distillery nestled in Marsannay-la-Côte, at the heart of Burgundy's Route des Grands Crus. In a world dominated by marcs and fines made from Pinot Noir and Chardonnay, Julie Ay has chosen to explore an exceptional fruit and produce a rarity: an eau de vie from Mirabelle plums sourced from the Vosges, renowned as the sweetest and least acidic of all varieties.
The fruit and its origin
The Mirabelle is one of the most emblematic and distinctive fruits of eastern France, and the variety Julie Mazy selects comes from Vosgian orchards, a mountainous and forested region whose terroir and microclimate impart incomparable aromatic typicity and complexity to this small golden fruit. The Mirabelle des Vosges benefits from exceptional natural conditions: rich, well-drained soils, a marked temperature swing between warm summer days and cool mountain nights, and generous sunshine that slowly builds natural sugar concentration without sacrificing the fruit's natural acidity. It is precisely this tension between sweetness and vibrancy that distinguishes the Vosgian Mirabelle aromatically from all other varieties. Julie Mazy meticulously selects fruit at perfect ripeness, harvested at the precise moment when the flesh is sweetest, the skin most perfumed, and the aroma most intense, laying the foundation for an eau de vie of rare purity and aromatic fidelity.
Distillation and ageing
Distillation is conducted in double passage, using a water bath, a slower and more precise method than direct distillation that preserves the most delicate fruit aromas by avoiding any harsh contact with direct flame. Julie Ay personally selects the heart of the distillate through tasting, rejecting heads and tails with an exacting standard that guarantees the purity and finesse of the final eau de vie. Ageing, for a minimum of two years, takes place in feuillettes, small Burgundian casks of 114 litres, previously containing Muscat de Beaumes-de-Venise. This choice is a signature: the musk and floral aromas of this naturally sweet wine subtly enrich the palette of golden plum without ever masking it, bringing a depth and complexity that stainless steel or glass could never offer.
Tasting profile
The colour is limpid and crystalline, lightly golden, a reflection of the time spent in feuillettes that gives it a warm hue. The nose is remarkably frank and delicate: the Mirabelle des Vosges announces itself generously, with aromas of ripe fruit, yellow peach and white flowers, with a slightly honeyed and musky touch inherited from the cask ageing, and a hint of sweet almond from the pit. On the palate, the natural sweetness of the fruit is perfectly integrated: the eau de vie is round, precise and of absolute purity, with no alcoholic heaviness. The distillation season runs from September to March, guided by a philosophy where quality absolutely takes precedence over quantity. In partnership with esteemed domaines of the Côte de Nuits for marcs and fines, and with organic fruit growers for fruit eaux de vie, Julie Ay produces a confidential and demanding range of Burgundian spirits, Marc de Bourgogne, Fine de Bourgogne Grand Cru, liqueurs and fruit eaux de vie, each bottle bearing witness to careful artisanal craftsmanship and a deep love of exceptional spirits.
