The Abricot du Roulot is the sunniest and most generous expression in Domaine Jean-Marc Roulot's liqueur range, a limited batch of just a few hundred bottles, crafted in Meursault within a family tradition of distilling that stretches back to 1866. Behind the vigneron universally regarded as one of the world's finest Chardonnay producers lies a precise and patient liquoriste, bringing the same care and rigour to fruit as he does to his Premiers Crus. With this apricot liqueur, orchard sunlight makes its way to Burgundy.

The fruit and its craft

Apricot is among the most capricious and demanding fruits in artisanal liqueur-making. Its window of ripeness is narrow, its perfume intense and fleeting, and the balance between natural sweetness and acidity demands a level of attentiveness that only the most dedicated craftspeople can preserve and reveal. The fruit selected by Jean-Marc Roulot, harvested at perfect ripeness from carefully chosen orchards, is macerated in spirit with the precision that defines every production from the domaine. The fruit speaks without excess, with complete fidelity to itself. The palate offers a subtle equilibrium between sweetness, freshness and intensity, avoiding any heaviness and allowing an elegant and digestible experience. Tasting profile

The colour is a luminous gold with warm amber and orange reflections, announcing the richness and directness of the fruit. The nose is striking in its immediacy and generosity, ripe apricot presenting itself fully alongside fresh, juicy fruit aromas, apricot blossom and sweet almond, with a subtle hint of honey and dried fruit evoking sun-dried apricots. This aromatic complexity, both fresh and candied, is precisely what distinguishes a great artisanal liqueur from industrial production, the dual nature of apricot, both vibrant and profound, tangy and sweet, expressing itself here in complete honesty. On the palate, the attack is round and generous, carried by a natural and controlled sweetness that quickly gives way to the fine acidity of apricot, bringing freshness and balance to a silky, well-built substance. The texture is velvety and persistent, with a long fruity finish that leaves an impression of absolute naturalness and sincerity, the hallmark of Roulot's liqueurs.

The domaine

Jean-Marc Roulot is among the most admired and respected figures in Burgundy, leading a domaine founded in 1830 in Meursault and recognised worldwide as one of the absolute references for Chardonnay, alongside names like Coche-Dury, Leflaive, Comtes Lafon and Raveneau. Since 1989, he has managed his 16 hectares according to biodynamic principles with unwavering rigour. Yet Jean-Marc Roulot is also, through family inheritance, a distiller and liquoriste. The tradition traces back to his great-grandfather in 1866, and the domaine's still continues to produce, in minute quantities, spirits and liqueurs of a precision and sincerity that naturally extend the domaine's identity. The complete Roulot liqueur range, including Mirabelle, Griotte, Abricot, Framboise and Poire, is made in limited quantities in an artisanal spirit that guarantees each batch absolute quality and honesty.

Tasting and serving

Abricot du Roulot is best enjoyed neat, lightly chilled between 10 and 12°C, in a liqueur glass or tulip-shaped glass. It pairs beautifully with warm apricot tart, almond and apricot financier, yellow fruit crème brûlée, white chocolate and apricot moelleux, or citrus panna cotta. It can also be enjoyed as an aperitif, over crushed ice with a splash of sparkling water for a summery long drink, or a few drops over vanilla ice cream for a simple and luxurious dessert.
