The Marc de Bourgogne L'Éponyme from Distillerie Mazy is the founding and most emblematic cuvée of the marc range, the very one that gives the house its name, or rather carries it in heritage, since éponyme means precisely that which lends its name to something. It was with this Marsannay marc that Julie Ay began to build her reputation as a distiller, a local raw material of immediate proximity, distilled and aged with the same rigour as cuvées from the most celebrated Grand Crus of the Côte de Nuits.
Raw materials and origin
L'Éponyme is made exclusively from 100% destemmed Pinot Noir marcs selected from Marsannay sites, the neighbouring appellation located mere steps from the distillery, a few paces from the rue de Mazy where Julie Ay installed her stills. This local terroir is no accident: it was by getting to know the vignerons of Marsannay, by learning their vineyards and cellars, that Julie Ay familiarised herself with Burgundy marc and formed the first partnerships at the distillery's origins. Marcs are delivered within days of wine pressing, in an ultra-short supply chain that guarantees freshness and aromatic purity. Distilled domaine by domaine, aged separately, then assembled according to the proportions detailed in the comprehensive technical sheet accompanying each cuvée, L'Éponyme is a terroir marc in every sense of the term, rooted in its village, true to its origins, transparent in its making. Each bottle is numbered.
Distillation and ageing
Distillation at Distillerie Mazy follows the artisanal rigour that is the house's signature, with careful selection of the heart cut by tasting and precise rectification using mineral-poor water. Ageing takes place in carefully selected French oak casks of modest capacity, for a duration that consistently exceeds the two years required by Marc de Bourgogne AOC regulations. The choice of casks is recorded precisely in the technical sheet: their previous use, in casks that held Marsannay wines, imparts a vinous and fruity dimension that subtly enriches the marc's aromatic palette without ever distorting it.
Tasting profile
The colour is amber, warm and luminous. The nose is expressive and impressively complex, with notes of ripe fruit and soft spice asserting themselves naturally, underscored by delicately integrated oak from the ageing. With aeration, nuances of prune, dried fruits and a light balsamic note progressively enrich this well-built bouquet. On the palate, the attack is ample and structured, with material that expresses itself with finesse and honesty, evolving towards flavours of prune, preserved fruit and liquorice, before unfolding in a long, elegant finish with slightly balsamic notes. A direct marc, without artifice, that speaks of its terroir with the frankness and authenticity that are Julie Ay's hallmarks.
The distillery
Founded in 2016 by Julie Ay in Marsannay-la-Côte, on Burgundy's Route des Grands Crus, Distillerie Mazy was born from the passion of a trained biochemist for Burgundian terroir and the discovery of an old liqueur recipe in the family library of her in-laws' estate in Gigondas. Julie Ay has built step by step an artisanal distillery of remarkable rigour and precision, with each cuvée accompanied by a detailed technical sheet detailing supplying domaines, the proportions of varieties and climates, and cask types, reflecting the complete transparency and rigour that characterise this house. The distilling season runs from September to March, with visits available by appointment.
Tasting and food pairing
L'Éponyme is traditionally enjoyed as a digestif, in a balloon glass gently warmed in the palm of the hand to progressively release its aromas. It pairs beautifully with well-aged cheeses of assertive character, a well-made Époisses, a Soumaintrain or an aged Comté, or with rich desserts such as a chocolate tart or a prune cake. And for devotees of the most authentic Burgundian tradition, in a warm coffee cup over melting sugar, as the vignerons of the Côte de Nuits still do on long winter evenings.
