Fine de Bourgogne stands as the noblest and rarest of Burgundian eaux-de-vie, born not from grape pomace but from the fine lees of wine, those precious sediments recovered during cellar racking. La Divine is crafted specifically from an exclusive blend of fine lees sourced from Premiers Crus of the Côte de Nuits, predominantly Pinot Noir with a touch of Chardonnay depending on the vintage, selected from partner domaines with whom Julie Mazy maintains bonds of trust and mutual exigence. These Premiers Cru lees make all the difference: they preserve the most delicate and complex aromas of the original wine, bestowing upon the Fine a finesse, aromatic presence and depth that no pomace can replicate. A trained biochemist and former environmental protection officer in Gevrey-Chambertin, Julie Mazy has built step by step an artisanal distillery of remarkable exigence and precision, located at 33 rue de Mazy in Marsannay-la-Côte, on Burgundy's Route des Grands Crus. Her confidential range of Marcs, Fines, liqueurs and fruit eaux-de-vie is accompanied by technical sheets of total transparency, reflecting a winegrower-distiller for whom quality reigns absolutely over quantity. Distillation season runs from September through March, with visits available by appointment.
