In the spirit of a bitter liqueur, with remarkable complexity, discover this authentic creation from Magnenet.
The Cyno from Distillerie Magnenet is an artisanal spirit of singular and absolute preciousness, rooted in the territories and landscapes that define the deep identity of Burgundy and its neighbouring regions. Its name is a declaration of origin: Cyno, from the Greek kunosbatos, refers to the wild rose whose fruit, the rosehip, is the principal botany of this creation. A liqueur that begins in the hedgerows of Burgundy's countryside and concludes in a glass of complexity and aromatic directness that few artisanal spirits can claim.
The botanicals and production
Cyno is crafted from a selection of botanicals of remarkable precision and geographical coherence, several of which come from wild foraging. The wild rosehip, fruit of the wild rose harvested at perfect autumn ripeness in the hedgerows and margins of the surrounding countryside, is the founding botany: its red-orange flesh, rich in vitamin C, gentle tannins and aromas of wild rose, pomegranate and tart fruit, forms the aromatic thread running through the entire cuvée. Gentian from the Massif Central, also wild-harvested from the high plateaus of Auvergne, brings a noble, structuring and profound bitterness, characteristic of great mountain liqueurs. Ginger adds a warm spiciness and stimulating vivacity. Sichuan pepper from Lorraine introduces its citric notes and subtle numbing quality. Cardamom brings a floral and camphoraceous touch. Pomelos with IGP Corsica certification contribute a lemony freshness and natural bitterness of incomparable intensity and authenticity to industrial versions. Sugar from North French beets brings natural sweetness and balance. The alcohol base, a Burgundy wine eau-de-vie, is the ideal binder uniting all these botanicals in remarkable aromatic coherence and depth.
Tasting profile
The colour is a deep, luminous red-orange, tinted by the natural pigments of rosehip, with immediate visual warmth and generosity. The nose shows remarkable complexity and directness: the rosehip asserts itself first with notes of dried rose, pomegranate, wild berries and hibiscus, before gentian emerges with its elegant, vegetal bitterness, fresh and vivifying ginger, and Sichuan pepper with its citric touch. Corsican pomelos bring freshness and citrus brightness that lighten and enliven the whole. On the palate, the attack is fresh and immediately stimulating, with natural sweetness well balanced by the noble bitterness of gentian and pomelo. The texture is silky and generous, with layered aromatic complexity that unfolds progressively: fruity, tart rosehip, the warm spices of ginger and cardamom, and the long, persistent bitter finish of gentian that characterizes spirits of real character. A spiritueux of absolute geographical coherence and sincerity.
The distillery
Distillerie Magnenet is a Burgundian artisanal house whose identity rests on botanical precision, territorial rootedness and a refusal of industrial artifice. Each ingredient is selected for its precise origin and intrinsic quality: wild foraging of rosehip and gentian, Sichuan pepper from Lorraine, Corsican IGP pomelos, beet sugar from northern France and Burgundy wine eau-de-vie together tell a coherent and compelling geography, from the Massif Central to the Mediterranean coast, passing through Burgundian hedgerows and the plains of northern France.
Tasting and pairing
Cyno is best enjoyed neat, lightly chilled between 10 and 12°C, in a liqueur glass or tulip glass to concentrate the aromas. Over ice with a pomelo or bitter orange zest, it becomes an aperitif of remarkable freshness and originality. It also works in characterful cocktails: a long summer drink with quality sparkling water and a sprig of fresh rosemary, or as a substitute for Aperol in a Spritz for a more complex, less sweet version. At table, it will happily accompany aged cheeses, a plate of fine charcuterie or a dessert with red fruit and rose. A precious and singular bottle that speaks with candour and conviction about where it comes from and what it is.
