Atelier 27dB is an artisanal distillery located in Dijon, founded by Baptiste Debeaumont, a passionate and creative distiller. Based in the Montchapet neighbourhood, this singular workshop combines innovation, respect for traditional craftsmanship, and a commitment to expressing Burgundian terroir. The Vermouth Blanc from Atelier 27dB is one of the most singular and terroir-rooted creations from Dijon itself, a grower's and artisanal distiller's aperitif, made just a few streets from Les Clos Vivants in the Montchapet neighbourhood by Baptiste Debeaumont. A Burgundian vermouth in every sense: all three components of its composition are local, precise, and chosen with the same rigour that guides each micro-batch from the workshop. A precious curiosity, confidential production, and above all a spirit that speaks of Dijon and its region in a way few bottles can claim.

Composition and Elaboration

This vermouth blanc is built on three complementary voices. The wine base is a Bourgogne Aligoté, a native regional variety, vigorous and tart, whose natural tension and citrus freshness form the ideal foundation to welcome the botanicals without ever receding behind them. Aligoté, long overlooked in favour of Chardonnay, finds here a new calling and reveals what is most precious about it: natural liveliness, lightness, and aromatic clarity that bring to the vermouth its structure and nerve. The second component is a local hydromel, this ancestral honey wine that brings natural sweetness, roundness, and floral and honeyed depth that bind the blend. The third component is a spirit of local plants, distilled by Baptiste Debeaumont himself in his copper stills, which concentrates the aromas of botanicals with a precision and richness that maceration alone cannot achieve. The elaboration rests on the workshop's constant philosophy: long fermentations, often natural, micro-batch distillations, and absolute care in selecting and expressing each ingredient.

Tasting Profile

The colour is golden and luminous, a pale gold with the greenish hues characteristic of Aligoté. The nose is immediately complex and fresh: floral and herbaceous notes assert themselves naturally, nourished by the locally distilled plants, accompanied by aromas of fresh honey and beeswax from the hydromel, and a citrus and slightly vegetal touch inherited from the Aligoté. The whole is marked by Burgundian coherence and sincerity that is immediately recognisable. On the palate, the attack is fresh and lightly bitter, in the tradition of great artisanal vermouths: the plants express themselves with precision, never dominating, in a balance between honeyed sweetness, bright acidity, and noble bitterness that brings structure and persistence. The finish is long, lightly herbaceous and floral, with that return of honey and fresh plants that marks the singular Dijonnais character of this vermouth.

The Distillery

Baptiste Debeaumont founded Atelier 27dB in the Montchapet neighbourhood of Dijon. His philosophy rests on elaborating spirits in micro-batches, privileging locally-sourced raw materials of high quality and long fermentations, often natural. Each distillation is conducted in copper stills, allowing precise refinement of aromas and preservation of the full richness of selected ingredients. The range is distinguished by its originality: white rums from extended fermentations, signature gins made with fresh local plants, singular eau-de-vie. This vermouth blanc is the most accomplished demonstration of what Baptiste Debeaumont does best: bringing together in a single glass the deep identity of a territory and the precision of a passionate craftsman.

Tasting and Food Pairing

This Vermouth Blanc is best enjoyed chilled, between 8 and 10 °C, served neat over ice with a citrus zest, in a wine glass or cocktail glass. It is the ideal aperitif for those wishing to discover Dijon and Burgundy from an unexpected and precious angle. At table, it will accompany with pleasure hot cheese gougères, herb-marinated olives, anchovies in olive oil, or a fine charcuterie board. It also works beautifully in a revisited Kir, replacing the white wine, or in a summer cocktail with quality sparkling water and a sprig of fresh rosemary.
