Rhum Blanc Longue Fermentation is the first rum fermented and distilled in Burgundy.
Working with a small peasant cooperative (organic and fair trade) in Ecuador that produces unrefined raw cane sugar, Baptiste Debeaumont sets this raw material into fermentation in ex-barrels from Burgundy and Jura wines, using natural decoction techniques of local plants to introduce the necessary elements for fermentation.
After several months of fermentation in cellar, the juices are distilled twice in a traditional alembic, resulting in an aromatic white rum for sipping.
