Fruity and floral with pear, honey and subtle cereal notes, this rare single malt from Chichibu distillery features floor-malted barley, delivering a fine, pure and elegant expression of artisanal Japanese whisky.
The Chichibu On the Way Floor Malted is a rare and sought-after expression from Chichibu distillery, emblem of Japan's artisanal whisky revival, crafted from barley malted on-site using the traditional floor malting method.

A release from Chichibu distillery, produced entirely from malt made on-site through floor malting, a technique remarkably uncommon in contemporary Japanese whisky, and aged in a selection of bourbon casks, hogsheads and puncheons. Bottled at 46.5 degrees. Chichibu remains Japan's most respected artisanal distillery, founded in 2008 by Ichiro Akuto, and this On the Way Floor Malted cuvée continues a consistent commitment to quality and authenticity of raw materials.

Ageing and origin

Produced from barley malted on the distillery floor using the ancestral floor malting method, abandoned by nearly all modern distilleries, this single malt marries the aromatic richness of artisanally produced malt with the complexity brought by a selection of bourbon casks, hogsheads and puncheons. Floor malting, which involves sprouting barley on the ground before turning it by hand, brings a cereal complexity and fatter texture than industrial malts, giving this expression rare depth and authenticity. Chichibu, founded in 2008 by Ichiro Akuto in Saitama Prefecture, remains one of the world's most admired distilleries for its artisanal approach and mastery of every production step.

Tasting profile

On the nose, a round fruitiness of apple and ripe pear mingles with sweet vanilla inherited from bourbon casks, floral honey notes and a hint of the malty cereal characteristic of floor malting. Beneath these aromatic layers, discreet floral freshness emerges, carried by a subtle note of citrus and fresh oak. A touch of soft spices and slightly fatty texture bring additional complexity, testament to the diversity of assembled casks. On the palate, the whisky is round and precise, balancing vanillic sweetness with preserved cereal freshness. The palate reveals notes of fresh fruit, light caramel, spices and a subtle woody note that structures the whole. The finish is moderately long and delicate, with a final note of malted cereal and sweet oak.

The producer

Chichibu is an artisanal Japanese distillery founded in 2008 by Ichiro Akuto in Saitama Prefecture, heir to a long family tradition of distillation. Recognised worldwide for the quality and rarity of its bottlings, Chichibu stands out for production practices among the most artisanal in the sector, including floor malting, remarkably uncommon in Japanese whisky, which forms the signature of this On the Way cuvée.

Tasting and pairing

This Chichibu On the Way Floor Malted is best enjoyed neat in a tulip glass at room temperature to fully appreciate the cereal richness of floor malting and the complexity brought by the diversity of casks. A few drops of pure water will reveal more of the floral and fruity notes of the spirit. It will find beautiful harmony with white fish sushi, delicate Japanese pastry, fresh herb cheese or light dried fruits, whose refinement will respond beautifully to the fruity roundness and artisanal precision characteristic of this expression.
