A fine original discovery, playing with remarkable subtlety between the sweetness of pink grapefruit and the noble, stimulating bitterness of its zest.
The Pink Grapefruit Liqueur L'Écorce du Clos from Clos Saint Joseph is the most sophisticated and unexpected cuvée in this range of artisanal citrus liqueurs crafted in Meursault, a liqueur of singular complexity and elegance that plays with remarkable subtlety between the fruity sweetness of pink grapefruit and the noble, stimulating bitterness of its zest. Among the four expressions in the L'Écorce du Clos range, this is the one that surprises most and wins the most lasting loyalty, a confidential citrus fruit too often overlooked in the world of artisanal liqueurs, which Blandine and Charles-Guillaume Simon have chosen to explore with the same rigour and precision as their more expected neighbours.
Origin and production
The Pink Grapefruit Liqueur sits within the Clos Saint Joseph citrus liqueur range, citron, clementine, orange and pink grapefruit, each expression elaborated according to the same rigorous protocol: untreated citrus peels after harvest, a fundamental quality requirement, as the absence of post-harvest treatment guarantees that the essential oils contained in the zest remain intact, pure and at maximum aromatic intensity. Pink grapefruit zests macerate in alcohol for several weeks, with progressive incorporation of spices throughout maceration to enhance and enrich the aromas, an artisanal technique allowing precise and sensitive dosing of complexity, built layer by layer. The alcoholic base is a high-quality, clean and neutral grain distillate, allowing the grapefruit to express itself fully without aromatic competition. Cane sugar is added with precision to balance the natural bitterness of the zest, in a delicate dosage that preserves the bitter and stimulating character of grapefruit while conferring the roundness and depth of a great artisanal liqueur.
Tasting profile
The colour is a rosy gold with shimmering copper highlights and fine clarity, which betrays the origin of pink grapefruit zests with no artificial colouring. The nose shows immediate complexity and allure: pink grapefruit asserts itself with its characteristic notes, fresh and slightly bitter zest, delicate floral notes of jasmine and rose, hints of exotic fruits and lychee, in a bouquet of fine originality that immediately distinguishes this liqueur from any other. Discreet spicy nuances from maceration, ginger, pink peppercorn, light cardamom, progressively enrich this bouquet with elegant depth and warmth. On the palate, the liqueur plays on the duality inherent to pink grapefruit: enveloping fruity sweetness in the attack, followed by noble and stimulating bitterness in mid-palate that brings structure, tension and persistent natural salivation. The texture is silky and slightly fat, with a balance between sugar, alcohol and bitterness of remarkable precision. The finish is long, fresh and slightly bitter, with this return of grapefruit zest and sweet spices that invites you back to the glass with renewed curiosity.
The distillery
Blandine and Charles-Guillaume Simon took over Clos Saint Joseph in 2014, a very old wine merchant based in Meursault, south of Beaune in Burgundy. They devoted themselves to restoring these premises, abandoned for half a century, to rediscover high-quality spirits. With the addition of their own still in 2019, they now run a true artisanal Burgundy distillery. All Clos Saint Joseph distillates are produced in Côte de Nuits and Côte de Beaune, sourced from renowned terroirs. The distillery carries out all work by hand and as a family, from bottling through to labelling.
Tasting and pairings
This Pink Grapefruit Liqueur is best enjoyed neat and very chilled, at 8–10 °C, in a liqueur glass or over ice. Its duality between sweetness and noble bitterness makes it a cocktail ingredient of rare elegance and originality: a revisited Paloma with white Tequila and dry tonic, a grower's Aperol Spritz as a substitute for Aperol, a Grapefruit Gin Tonic or a long cool drink with brut Champagne and a pink grapefruit zest. In the kitchen and pastry kitchen, a few drops will elevate a pavlova with red fruits and grapefruit, a set grapefruit cream or a carpaccio of sea bream with citrus. It will also pair with surprising harmony with semi-cooked foie gras, whose richness will be cut and stimulated by the noble bitterness and floral freshness of the liqueur.
