This William Cadenhead selection comes from Caol Ila distillery on Islay. Aged 10 years in ex-bourbon casks, this peated Single Malt was then finished in ex-Palo Cortado Sherry cask, revealing a new facet of the distillery's character.
The nose carries you straight to the island with sea spray and peat smoke. On the palate, dates and apricots are wrapped in smoke. The finish opens with toasted cereal notes that evolve into ashy minerality. The Palo Cortado finish adds subtle dried fruit and strawberry notes that linger beautifully, giving this expression of Caol Ila an unexpected richness.
