Caol Ila 11 Year Old by William Cadenhead was selected from the Caol Ila distillery on the island of Islay. Aged in ex-Bourbon casks, this peated Single Malt then finished in an ex-Palo Cortado Sherry cask. Cadenhead reveals a fresh facet of this iconic Islay distillery.
The nose carries you straight to the island with maritime spray and peat smoke. On the palate, flavours of dates and apricots wrap themselves in smoke. On the finish, cereal becomes toasted then evolves into ashy notes. A fine expression of Caol Ila where the Palo Cortado cask's influence translates to subtle aromas of dried fruit and strawberry in the finish.
