A peated Islay single malt from Caol Ila, aged 9 years in rare Rivesaltes hogsheads by Signatory Vintage. Smoky and maritime, with iodine, dried fruit and candied notes from the fortified wine cask, offering original intensity and real complexity.
The Caol Ila 9 Year Old 2017 First Fill Rivesaltes Hogsheads from Signatory Vintage is one of the collection's most singular expressions, from one of Islay's most emblematic peated distilleries, matured in a rare cask that previously held a vin doux naturel from Roussillon.

Bottled by Signatory Vintage, one of Scotland's most respected independent bottlers, this whisky was distilled at Caol Ila in 2017 and aged 9 years in first fill Rivesaltes hogsheads. Non-chill filtered and without added colouring. Caol Ila remains one of Islay's most productive distilleries, recognised for its elegant peated and maritime style, and this Rivesaltes hogsheads edition reflects Signatory Vintage's most audacious selections.

Ageing and origin

Matured exclusively in first fill Rivesaltes hogsheads, this single malt marries Caol Ila's fine peaty smoke and maritime character with the amber sweetness and fruitiness of a Roussillon fortified wine. The Rivesaltes cask brings notes of candied fruit, dried apricot and a honeyed touch to the distillery's coastal style, balancing delicate peaty smoke with an unexpected syrupy roundness in a young expression of considerable aromatic complexity. Situated on Islay's west coast facing the sound that bears its name, Caol Ila was founded in 1846 and remains one of the island's most discreet yet respected distilleries.

Tasting profile

On the nose, light peaty smoke and salinity mingle with candied fruit notes, apricot, yellow peach and orange, touched by floral honey and a whisper of beeswax. Beneath these generous layers, Caol Ila's maritime character asserts itself through briny air and dried seaweed notes. A hint of pecan and oxidative character add further complexity, echoing the fortified wine ageing directly. On the palate, the whisky is round and expressive, balancing peaty smoke with generous fruity sweetness. The palate reveals candied apricot, honey, gentle spice and persistent smoke that structures the whole. The finish is long and saline, closing with dry fruit and light peat.

The producer

Signatory Vintage is one of Scotland's most respected and prolific independent bottlers, recognised for selecting exceptional casks from the country's greatest distilleries, whether or not they permit their names to be used. Its selections from fortified wine and rare wine casks reflect a consistent commitment to exploring original pairings between Scottish malt and uncommon finishes.

Tasting and pairing

This Caol Ila 9 Year Old First Fill Rivesaltes Hogsheads is best enjoyed neat in a tulip glass at room temperature to fully appreciate the balance between peaty smoke and Rivesaltes sweetness. A few drops of pure water will reveal more candied fruit notes and the briny freshness of the spirit. It pairs beautifully with seared foie gras, dried fruit desserts, aged sheep's cheese or oysters, whose iodine will echo the maritime smoke and fruity richness characteristic of this expression.
