Mineral and crisp, with citrus, flint and iodine notes. A precise, saline Chablis from the Les Tierces lieu-dit, signed by Dauvissat, fresh, taut and deeply expressive.
The Chablis Les Tierces 2023 from Domaine Jean Dauvissat Père et Fils is the pure expression of Chablis terroir according to Fabien Dauvissat: a vibrant, dry and approachable Chardonnay of remarkable aromatic finesse, with a refined and elegant structure.
Terroir and vineyard
The lieu-dit Les Tierces sits in the commune of La Chapelle Vaupelteigne. Classified as Chablis appellation, this slope benefits from full east-facing exposure, with shallow soil over calcareous marls rich in marine fossils. The domaine cultivates 0.90 hectares of vines aged 60, 35 and 21 years, farmed organically and hand-harvested on 16 September 2023 for a yield of 72 hl/ha, producing 6,059 bottles. Pressing is gentle and prolonged, followed by an equally long static débourbage. Fermentation is conducted with indigenous yeasts. Part of the cuvée ages in vat and part in demi-muid. The two portions are then blended for a further ten months of ageing before bottling.
Tasting profile
The nose is fresh, with citrus, green apple, white fruits and white flowers, and beautiful mineral expression. The palate is taut, vibrant and saline, driven by harmonious acidity. The finish is long and elegant, linear and refreshing.
The domaine
The domaine was founded in 1955 in Milly by Jean Dauvissat. His grandson Fabien, in charge since 2009, has converted it to organic farming and vinifies parcel by parcel across approximately twenty hectares spread over seven communes, using indigenous yeasts and minimal sulphur additions. The vines from both banks of the Serein offer a faithful reflection of the appellation.
Food pairing
This Chablis pairs beautifully with oysters, shellfish, sushi, grilled fish, crustaceans, fresh cheese or delicate vegetarian dishes. Served between 10 and 12 °C, it is best enjoyed now for its freshness and vitality.
