Mineral and taut, with citrus, flint and briny notes. A precise, saline Chablis from the lieu-dit Mont Main Sourdelle, signed by Domaine Jean Dauvissat, fresh, clean and with lovely length.
The Chablis Mont Main Sourdelle 2023 from Domaine Jean Dauvissat Père et Fils is a precise, saline Chablis from the lieu-dit, drawn from two parcels in Beines that winemaker Fabien Dauvissat considers worthy of Premier Cru quality. A mineral, taut Chardonnay with citrus, flint and briny notes, fresh, clean and with lovely length.
Terroir and vineyard
The vines of Mont Main and Sourdelle lie in the commune of Beines, on the left bank of the Serein, facing the Premier Crus Côte de Léchet and Vau de Vey. The soil rests on Kimmeridgian limestone, the geological signature of Chablis, which imparts a firm minerality and precise fruit expression here. This lieu-dit presents terroir very close to its neighbouring Premier Cru. Fabien Dauvissat has converted the entire domaine to organic farming since 2009, and this cuvée belongs to his parcel-by-parcel range of Chablis from various lieux-dits. The 2023 vintage saw a mild winter, a spring when frost had little impact on the domaine, followed by an unstable period from April to June requiring close attention. Despite summer drought, the berries remained healthy and of high quality. Pressing is long and gentle, followed by static settling for 12 to 24 hours. Fermentation proceeds with indigenous yeasts, and the wine continues its ageing for several months before bottling.
Tasting profile
The nose is fresh and vibrant, showing grapefruit and lemon zest, with notes of flint and briny spray, sea shell and white flowers. The palate is taut and precise, driven by lovely energy and clean fruit. The finish is chalky and saline, straight and with fine length, of great purity.
The domaine
The domaine was founded by Fabien's great-grandfather Alphonse in La Chapelle Vaupelteigne, then developed by his son Jean, who began bottling at the domaine. Since Fabien's arrival in 2009, he has ploughed the vineyards, adopted indigenous yeasts throughout the cellar and abandoned enzymes. The domaine today comprises some twenty hectares spread across seven communes around Chablis, vinified mostly in stainless steel to preserve the freshness and tension of the variety.
Food pairing
This Chablis pairs beautifully with oysters, shellfish, salmon or simply grilled noble fish, light poultry or mild cheese. Served between 10 and 12°C, slightly warmer than is customary, to let the terroir speak, it is ready to drink now for its freshness and will also gain complexity with a few years in the cellar.
