Mineral and elegant, with citrus, flint and white flowers. Fabien Dauvissat's precise, saline Premier Cru Chablis, fresh, taut and with impressive length.
The Chablis 1er Cru Vaillons 2023 from Domaine Jean Dauvissat Père et Fils is the celebrated Vaillons climat brought to life by Fabien Dauvissat. Charming and captivating, it marries ripe fruit with a distinctive Kimmeridgian signature, offering a vigorous Chablis with good body and lovely persistence.
Terroir and vineyards
The domaine owns 0.83 hectares on the Premier Cru Vaillons, spread across three small parcels within the Châtains lieu-dit, planted in 1988, 1971 and 1968. The soil is shallow and very stony, sitting on a Kimmeridgian subsoil rich in sedimentary shells. The vines are farmed organically, with hand-harvesting and rigorous sorting. Pressing is long, followed by static settling. Fermentation uses native yeasts at cool temperatures. Ageing lasts one year on fine lees in demi-muids and stainless steel, then six months of harmonisation before bottling.
Tasting profile
The nose combines ripe fruit with refined secondary notes: preserved lemon, yellow fruits, roasted hazelnut, hawthorn and abundant chalk. The palate shows lovely flesh, a savory body and richness, woven through with an underlying mineral thread that delivers impressive length. The finish is long and remarkably precise.
The domaine
The domaine was founded in 1955 in Milly by Jean Dauvissat. His grandson Fabien, at the helm since 2009, converted it to organic farming and vinifies around twenty hectares spread across seven communes, parcel by parcel, using native yeasts and minimal sulfur additions. The vineyards on both banks of the Serein offer a complete reflection of the appellation.
Food pairing
This Premier Cru Chablis pairs beautifully with pike perch in beurre blanc with tender leeks in hazelnut oil, shellfish, salmon, pork or soft-paste cheese. Serve between 10 and 12°C. Drink now for its charm, or cellar for a few years to gain in complexity.
