Floral and mineral, with citrus, redcurrant, and stony notes. A vibrant Sancerre from Domaine Denizot, tense and deeply expressive.
The Sancerre Les Bouffants 2023 from Domaine Denizot is a single-vineyard cuvée from one of Sancerre's legendary lieu-dits in Chavignol. A profound and generous white, marked by smoky flint minerality, the tension of its terroir, and supported by a clear chalky structure and beautiful bitter notes.
Terroir and vineyard
Les Bouffants is a south-facing limestone and griottes hillside in Chavignol, a warm, early-ripening terroir. On the domaine, it divides in two: the upper slope (75 percent), very stony, on caillottes, the distinctive limestone pebbles of Sancerre with fluid, supple soil, and the steep lower section (25 percent) on finer, softer limestone called griottes. Sauvignon Blanc vines, planted at 7,500 feet per hectare, are trained in poussard guyot, respecting sap flow, with thoughtful bud removal and soil working in organic farming. Harvest is by hand, into small crates. Pneumatic pressing is long and gentle, juice is handled by gravity or slow pump, without sulphur before fermentation, after 36 to 48 hours of natural settling. Fermentation and ageing take place in 600 litre demi-muids and 350 litre elongated barrels from Atelier Centre France, on fine lees, for about one year. The wine then rests several months in tank before bottling.
Tasting notes
The colour is pale and luminous, with subtle golden glints. The nose is intense and complex: boxwood, white flowers, citrus, stone fruits and exotic notes, with a touch of flint smoke. On the palate, it opens rich and full, then freshness settles in with a beautiful chalky structure and deep, vibrant acidity. The aromatic power balances this first-rate Sauvignon harmoniously, and the long finish reveals beautiful noble bitters.
The domaine
Domaine Denizot is a family property based in Verdigny, on the edge of Sancerre, today run by Jennifer and Thibauld Denizot, who carry on six generations of winemaking knowledge. Like Côte de l'Épée for their Damoclès cuvée, Les Bouffants is a legendary lieu-dit the couple chose to isolate in order to highlight another facet of their vineyard's diversity.
Food pairing
This Sancerre pairs beautifully with trout or salmon, shellfish, Japanese cuisine, and naturally with crottin de Chavignol. Serve at 12°C. Drink now or keep for five to six years in cool storage.
