The Savennières Bellevue 2022 from Domaine Patrick Baudoin is one of the most anticipated and admired dry Chenins of the appellation. Without exuberance or forcing, this Savennières unfolds with a fine grain and an allure that is beautifully true to its terroir. On this 2022 vintage, warm and generous, Patrick Baudoin's mastery expresses itself with a precision and serenity that confirm his place among the Loire's greatest winemakers. It was in 2009 that Patrick Baudoin invested in the sublime terroir of Savennières by taking over 1.5 hectares of vines approximately 35 years old.

The terroir and the vines

The most celebrated cru of dry Chenins in Anjou, on the right bank of the Loire. A parcel planted in 2009, on weathered ochre talcose schist, on a gentle south-facing slope in the commune of Savennières, overlooking the Loire. It has earned its name well. Though Patrick Baudoin's roots lie on the left bank of the Layon, this lover of the great schistose terroirs of Anjou could not remain indifferent to the charms of the region's flagship appellation, Savennières, located some ten kilometres north of his family home, on the banks of the Loire. Finding a parcel within Savennières's crus is not easy, but Patrick armed himself with patience, using this time to vinify for several vintages some négociant-sourced grapes from this prestigious terroir, before replanting in 2009 this fine hectare. Horse work has been practised since autumn 2016. Vinification is based on direct pressing, static clarification overnight at cellar temperature, cask racking at the start of fermentation by natural flotation using the must's CO2, slow fermentation in casks that finishes in spring, spontaneous malolactic fermentation, and ageing in casks after racking and blending until bottling. Fermentations are slow and ageing takes place in Burgundian casks of 400 and 228 litres, 50 per cent new oak and 50 per cent one-year oak, on fine lees.

Tasting profile

The gold-yellow colour reveals an intense and well-ripened nose. First quince jam and tarte tatin, refreshed by white pepper and abundant florality. On the nose, subtle floral aromas mingle with notes of white-fleshed fruits and almond. On the palate, its texture is both fleshy and delicate, revealing a vibrant minerality, signature of its schistose terroir. The light oak influence blends harmoniously, adding depth without heaviness. Fine structure on notes of yellow fruits and flowers, carried by an approachable minerality accompanied by a few subtle lightly oaked notes. This structured yet fresh wine calls for pairing with elaborate dishes. Ripe fruit very expressive, freshness and saline energy of the terroir. A sapid finish, intense and of remarkable length. A great Loire wine, to drink from 2025 onwards and capable of evolving beautifully over ten to fifteen years.

The domaine

Created in 1920 by Louis and Maria Juby, Domaine Patrick Baudoin holds 13 hectares of vines cultivated on ancient Armorican bedrock of volcanic rocks, schist and sandstone, tended through certified organic viticulture. The domaine favours horse work and promotes the life of trees and soils. In the cellar, wine is conceived as a 'cultural creation'. First a major producer of sweet wines, Patrick Baudoin reoriented part of his production towards great dry whites from 2001 onwards, with the constant ambition to let the terroir express itself so that the lover of wine might distinguish its birthplace, be moved by its ageing potential and enjoy it at table.

Food and wine pairings

A structured, mineral yet fresh wine that calls for pairing with elaborate dishes: fish with beurre blanc, poultry in cream, mushrooms. A fillet of sea bass with beurre noir or poultry creamed with ceps would be pairings of great class. It will also find fine harmony with langoustines grilled in tarragon butter, sole meunière or risotto with white truffles. Aerate this Bellevue generously, especially in its youth. Served between 10 and 12 °C, it will reveal all the precision, mineral tension and depth of a great dry Chenin from Savennières.
