The Sancerre Osmoze 2025 from Domaine Denizot is the entry point into Thibauld and Jennifer Denizot's world, and as is often the case with conscientious vignerons, this introduction already tells you much about the house. Revue du Vin de France awarded it a coup de coeur, recognizing a Sancerre crafted with meticulous attention that reveals a precise and savoury expression of the variety, free from any excess. We celebrate the fine definition of this wine from a domaine currently in excellent form. A 100 percent pure Sauvignon Blanc drawn from a mosaic of chalky terroirs that weaves together the diversity and complexity of the appellation in a single glass.

Terroir and vines

The Osmoze cuvée comes from a blend of terroirs across four villages: Amigny, Chavignol, Sancerre, and Verdigny, planted on Caillottes, the Portlandian limestone pebbles of the Sancerrois. These Caillottes, fragile white limestone stones that crackle underfoot like sugar, represent one of the three emblematic soil types of Sancerrois. Their light, well-draining composition gives Sauvignon Blanc a delicate, floral expression with an immediately recognizable mineral freshness. Domaine Denizot comprises 18 hectares within the Sancerre appellation on the commune of Verdigny. Production is predominantly white at 75 percent. Viticulture at the domaine is reasoned, close to organic: no insecticides, acaricides, anti-rot treatments, or herbicides. Pruning follows Guyot poussard, respecting sap flow. Harvesting is manual. Vinification is precise and non-interventionist: long, gentle pneumatic pressing, gravity-handled or slow-pumped juice manipulation, strict débourbage, fermentation in concrete and stainless steel vats, and ageing on fine lees. The concrete vat allows for gentle juice aeration, promoting greater wine maturity.

Tasting profile

The 2025 vintage brings Sancerre a natural freshness and particularly striking vivacity, carried by well-preserved natural acidity that exalts the crisp and precise character of Sauvignon Blanc on Caillottes. A Sauvignon with rich, intense fruit balanced by fine mineral freshness and sustained by good tension. The nose opens on aromas of grapefruit, lime, white peach, and white flowers, with a discreet mineral touch. The different terroirs reveal themselves fully on the palate, with chalky notes that build a fine mineral structure. The palate is lively, direct, and precise, driven by measured acidity and a saline, persistent finish. A crystalline profile, with mineral tension and saline freshness that promise to be particularly expressive on this fresh vintage. A Sancerre that combines immediate pleasure with fine capacity to evolve over four to six years.

The domaine's range includes several ambitious single-vineyard cuvées, Bouffants, Damoclès, Côte de l'Épée, and Monts Damnés, with Osmoze serving as the most accessible and consistent entry point.

Food pairings

This Sancerre Osmoze pairs beautifully with fine oysters from claire ponds, a seafood platter, quality sushi and sashimi, tartare of bass with fresh herbs, steamed scallops, grilled fish with beurre blanc, or lobster salad with citrus. It also finds classic harmony with aged Crottin de Chavignol, a territorial pairing par excellence, or fresh goat cheese with herbs. Served well chilled between 8 and 10°C, it will reveal all the freshness, precision, and chalky minerality of an authentic and sincere Sancerre.
