The Corse Sartène L'Ermite Blanc 2025 from Domaine Sant Armettu stands as the finest expression of the domaine's white wines, a single-vineyard cuvée born from meticulous selection of Vermentinu on the high hillsides of Tizzano. Gilles Seroin, Guillaume and Jeanne craft this wine with a precision and rigour that places it among France's greatest island whites. Its name honours a Corsican hermit healer who, according to tradition, chose this exceptional site to practise his gift, a founding figure whose spirit of solitude, patience and exactitude runs through every decision at the domaine.
Terroir and vineyard
L'Ermite blanc comes from a parcel selection on the high hillsides of Tizzano, in the most southern and wild part of the Sartène appellation, facing the Gulf of Propriano. The vines are planted on the clay-granite sands characteristic of deepest south Corsica, poor soils with exceptional drainage and rare minerality. The sandy texture and silica richness give Vermentinu a tension, freshness and aromatic precision that few Mediterranean terroirs can match. This emblematic Corsican grape, known as Rolle in Provence and Vermentino in Italy, finds its most complex and mineral expression in these granite sands, revealing a verticality and purity closer to great northern whites than to typical Mediterranean wines. Harvest is entirely manual with careful sorting in vineyard and cellar. Destemmed grapes ferment with wild yeasts in oak foudres, unaided and unfiltered, in absolute respect for terroir expression. Twelve months ageing in foudre refines and enriches the aromatic structure while preserving the characteristic purity and minerality of grape and place.

Gilles Seroin created the domaine's first cellar in 1996, deciding to vinify the fruit from old vines himself rather than deliver them to the cooperative, inspired by Burgundian approaches to winemaking. His children Guillaume and Jeanne have progressively joined the domaine, continuing with the same rigour and Corsican passion the family heritage. Bettane and Desseauve regularly recognise Gilles Seroin as one of Sartène's most consistent and talented vignerons, known for his instinctive sense of balance and ability to draw the quintessence of endemic Corsican grapes from one of the island's most singular granite terroirs.
