Black fruits, maquis and spice. A structured, mineral Corsican red from Domaine Sant Armettu, with firm tannins and lovely persistence.
The Corse Sartène L'Ermite Rouge 2024 from Domaine Sant Armettu is the domaine's most ambitious and emblematic cuvée, the great red wine through which Gilles Seroin, Guillaume and Jeanne have built their international reputation and established themselves as one of the absolute references of the Sartène appellation. A 100 percent Sciaccarellu, from a careful parcel selection of old vines on the granitic arènes of Tizzano, vinified and aged with Burgundian precision and the insular soul that defines this domaine's unique character.
Terroir and vines
L'Ermite rouge comes from a rigorous parcel selection on the hillsides of Tizzano, in the wildest and most southern part of the Sartène appellation. The old, low-yielding vines are planted on granitic arènes characteristic of far southern Corsica, poor sandy soils with excellent drainage and remarkable minerality. Their silica content and sandy texture give Sciaccarellu a freshness, lightness and aromatic precision that contradicts everything one imagines of a southern French red. Sciaccarellu, the endemic red grape cultivated almost exclusively in Corsica's far south, finds its ideal expression on this granitic terroir. Its small, tightly clustered, lightly coloured grapes naturally produce wines of pale garnet colour, fine tannin structure and striking aromatic freshness, pepper, red fruits, spice, setting them apart from the more powerful, tannic southern varieties. The graphite notes that emerge on tasting beautifully express the granite arènes of Sartène. Harvest is entirely manual with careful selection in vineyard and cellar. A cold prefermentation maceration between 12 and 16°C precedes fermentation in large wooden vessels with pigeage and remontage guided by sensory timing, a precise, minimalist extraction that preserves the grape's natural finesse. Ageing of nine months in large wooden vessels then nine months in tank brings progressive complexity and depth without ever weighing the texture or masking fruit purity.
Tasting profile
The robe is a delicate garnet red with ruby highlights, luminous and transparent, characteristic of Sciaccarellu on granite. The nose is striking in its elegance and depth, fresh red fruit notes, wild strawberry, raspberry, redcurrant, opening with natural spontaneity, before white pepper, cinnamon, nutmeg emerge, with a light herbal touch of Corsican maquis and fine, precise graphitic minerality that is the true signature of Tizzano Sciaccarellu. With air, nuances of undergrowth, delicate leather and blonde tobacco gradually enrich this bouquet with growing depth and complexity. On the palate, L'Ermite is both silky and structured, a generous, brilliant, complex matter, carried by remarkably fine and delicate tannins, fresh, precise acidity that brings drive and length, and that natural lightness of Sciaccarellu on granite that allows drinking without tiring. The finish is long, graphitic and lightly peppery, with rare aromatic persistence for an island red, a wine built for ageing and immediate pleasure alike.
The domaine
The Seroin family has been established on these southern Corsican lands since 1964. Gilles Seroin created the domaine's first cellar in 1996, inspired by Burgundian approaches to vinification. His children Guillaume and Jeanne gradually joined the domaine, perpetuating the family heritage with the same rigour and Corsican passion. The domaine is run under certified organic and biodynamic agriculture, a deep and early commitment to preserving the granitic soils of Tizzano and the biodiversity of the surrounding maquis. Bettane and Desseauve regularly praise Gilles Seroin as one of Sartène's most consistent and talented winemakers, recognised for his innate sense of balance in vinification and his gift for revealing the quintessence of Sciaccarellu on one of the island's most singular granitic terroirs.
Food pairings
This Corse Sartène L'Ermite Rouge will pair beautifully with characterful Corsican charcuterie, grilled figatellu, aged coppa, lonzu, farmyard poultry with wild mushrooms, Corsican lamb cutlets with maquis herbs, roasted quail with small vegetables or game birds. It will also harmonise well with aged Corsican cheeses like Niolo or Corsica Vecchju, or a matured Comté for those wishing to play with terroir and minerality complementarity. Served slightly cool between 15 and 16°C, with decanting for half an hour advised in its youth, it will reveal all the graphitic finesse, freshness and depth of one of Corsica's greatest reds.
