Ventoux Blanc 2025 Domaine de Fondrèche
A reference point for Ventoux, Domaine de Fondrèche tends its vines at altitude on clay-limestone and stony soils at the foot of Mont Ventoux. The sharp temperature swings between day and night preserve freshness and balance, giving rise to Southern whites that are at once generous and taut.
Born from a blend of Roussanne, Grenache Blanc and Viognier, this 2025 vintage reflects the precision of the domaine's work. Careful vinification and partial ageing on lees, in tank and barrel according to the lots, bring relief and complexity while keeping aromatic purity intact.
The colour is luminous pale gold. The nose reveals aromas of pear, fresh apricot and white peach, completed by floral notes and a subtly aniseed touch. On the palate, the attack is ample and harmonious, supported by fine mountain freshness. The texture is silky, with a persistent finish, lightly saline and delicately spiced.
Serve around 10–12°C. It will pair beautifully with grilled fish, shellfish, herb-roasted poultry or roasted vegetables. Drink within 3 to 6 years to enjoy its freshness and balance.
