Ripe pear, yellow fruits and soft spices. Hebinger's Pinot Gris from the Saint Jacques lieu-dit, round and silky, precise with lovely freshness.
The Pinot Gris Saint Jacques 2024 from the Hebinger family is a generously textured, silky Pinot Gris from a specific lieu-dit, made in a rather modern style. An elegant wine with lovely richness balanced by crisp acidity. The vineyard takes its name from the pilgrim route to Santiago de Compostela, which crosses this Eguisheim slope.
Terroir and vineyard
The parcel sits on the north east facing slope of Grand Cru Eichberg, on Oligocene marl and sandstone scree soils. Pinot Gris vines are farmed biodynamically with exclusively hand harvested fruit. The grapes undergo direct pressing, with ageing in large old oak vessels. The crisp acidity from the sandstone is balanced by extended ageing, which broadens the wine and gives it structure. A dry wine in perfect balance, with a residual sugar index of 1 out of 5.
Tasting profile
The colour is a sustained gold. The nose is floral and spiced, with lovely complexity, mingling fruit aromas with subtle smoky notes. The palate has good texture, elegant freshness and crisp acidity from the sandstone terroir, with an expressive aromatic profile. The finish is persistent and refined. A complete wine that rewards patience with a few years of bottle age.
The domaine
Established in Eguisheim since 1985, Christian and Véronique Hebinger, joined by their son Denis, farm 11.2 hectares of certified organic and biodynamic vineyard around this small medieval town, one of France's most beautiful villages. Their vines also occupy four Grand Crus: Eichberg and Pfersigberg in Eguisheim, Hengst in Wintzenheim and Sommerberg in Niedermorschwihr. The wines, fermented with indigenous yeasts, are recognised for their purity and precision.
Food pairing
This Pinot Gris pairs well with grilled or roasted white meat, pâté en croûte, risotto, aged goat cheese, or dishes with curry, ginger or lavender. Served around 12°C after decanting, it is ready to drink now, or will keep for several years.
