Mineral and taut, with citrus, peach and floral notes. Hebinger's Riesling from Herrlisheim is precise and vibrant, fresh, saline and elegantly restrained.
The Riesling Herrlisheim 2024 from the Hebinger family is a lovely expression of limestone-rooted Riesling, with fluid texture, underpinned by crisp, round acidity. A white wine of dry balance, straight and fresh, that carries with precision the limestone character from which it springs.
Terroir and vineyard
This Riesling comes from a young parcel on the Herrlisheim commune, south of Eguisheim, planted on calcareous soils. The vines, cultivated in biodynamics, are managed without herbicides, with alternate rows under grass cover and moderate yields. Harvesting is exclusively by hand. Winemaking relies on indigenous yeasts and minimal intervention to preserve fruit purity and limestone expression. The wine has a residual sugar index of 1 out of 5, dry on the palate.
Tasting profile
The colour is pale yellow with golden glints. The nose is fairly expressive, offering fresh citrus and white flowers with distinct limestone minerality. The palate is straight and fresh, of fluid texture, supported by crisp, round acidity. The finish is taut, salivating and pure.
The domaine
Established in Eguisheim since 1985, Christian and Véronique Hebinger, joined by their son Denis, cultivate around the small medieval town a vineyard of some ten hectares, certified organic and biodynamic. Their vines also cover four Grand Cru sites, Eichberg, Pfersigberg, Hengst and Sommerberg. The wines are recognised for their purity, tension and precision.
Food pairing
This lovely limestone Riesling pairs well with river fish, shellfish, cold platters or rich fish. Served around 10°C, it is best enjoyed in its youth for freshness.
