The Arbois Pinot Noir Au Désert 2024 from Domaine Sylvain Faudot is the most striking and intriguing wine in the range, a Jurassian Pinot Noir from a lieu-dit of mysterious and evocative name, demonstrating with elegance that the Jura is far more than the land of Trousseau and Poulsard. Celebrated as a luminous Pinot Noir by those who discover it, this wine marries the Burgundian finesse of the grape to the minerality and singular tension of Arbois terroirs, in a style that is direct, sincere and immediately seductive.

The Au Désert lieu-dit

The Au Désert lieu-dit is a parcel situated north of Arbois, in the commune of Saint-Cyr-Montmalin, in a sector whose name owes not to dryness or aridity, but to isolation and the rawness of the site, those scattered and wild lands that medieval farmers called a "desert" to mean a sparsely inhabited zone, remote from the village. Nearby stands a chapel dedicated to Saint Anthony the Hermit, whose solitary visions were immortalised by Flaubert in a celebrated story, a reference that nourishes the imagination attached to this singular terroir. The soils are composed of very ancient Triassic clayey marls, with a superficial layer scarcely 15 centimetres thick resting directly on a limestone bedrock. This soil thinness requires working only with light machines to avoid compressing the earth and suffocating the roots. The vineyard is worked row by row: grass is maintained in every other row to limit production and create healthy competition, whilst the alternate row is scratched manually and superficially. This poor, well-draining terroir gives the Pinot Noir a tension and minerality reminiscent of the chalky terroirs of the Côte de Nuits, with the freshness and wild character proper to the Jurassian vineyard.

Tasting profile

The colour is a clear and brilliant ruby, with a fine transparency characteristic of Jurassian Pinot Noirs vinified without excess of extraction. The nose is fine, precise and immediately expressive, with aromas of fresh red fruits, cherry, raspberry and redcurrant, mingling with light floral notes of peony and violet, lifted by a discreet spice and chalky minerality that marks the limestone imprint of the terroir. On the palate, the wine is supple, elegant and freshly composed, the tannins fine and silky, the acidity lively and natural, bringing tension and definition, and the light matter unfolds with a grace and clarity that evoke the finest Burgundy Pinot Noirs, without ever mimicking them. The finish is fruity, mineral and persistent, with that slightly wild and herbaceous return that is the signature of the great Jurassian terroirs. A wine of pleasure and character, to drink in its youth or to keep three to six years.

The domaine

Sylvain Faudot settled in 1998 at Saint-Cyr-Montmalin, north of Arbois, taking over the family hectare and progressively building a vineyard of 6 hectares worked in sustainable agriculture, without insecticides and with meticulous soil work parcel by parcel. Trained both by his father and by the house Henri Maire, for which he supplied his harvest for twelve years, he vinifies each lieu-dit separately to reveal the specificities of each terroir. The five grape varieties authorised in Arbois are represented on the domaine, Chardonnay, Savagnin, Trousseau, Poulsard and Pinot Noir, each finding here a precise and authentic expression. The range includes notably a remarkable Vin Jaune, a Macvin du Jura and a rosé Crémant 100 per cent Poulsard having spent 18 months on the laths. A domaine without fanfare, run with passion and consistency, whose wines seduce through their honesty and sincerity.

Food pairing

This Pinot Noir Au Désert will pair beautifully with roasted farmyard poultry with herbs, rabbit with mustard, wild mushrooms sautéed with garlic and parsley, a country terrine or a platter of Jurassian cheeses such as Comté aged 18 months, Morbier or Mont d'Or warmed in season. Served between 14 and 16 °C, lightly chilled, it will reveal all the finesse and minerality of a Jurassian Pinot Noir of rare elegance.
