The terroir of Les Peuillets

Les Peuillets is one of 22 Premier Crus of Savigny-lès-Beaune, situated at the southern boundary of the commune, directly bordering the Premier Crus of Beaune, separated from the celebrated Beaune 1er Cru Clos du Roi by a simple path. This edge position between two great appellations is essential to understanding it: the terroir of Les Peuillets has something of Beaune's generous, fleshy character, while retaining the lightness and drinkability typical of Savigny. The etymology of the name holds a double and fascinating mystery: one theory links it to old French Pelet, meaning 'nothing, a trifle', referring to the meagre fertility of the soil, unsuitable for crops like wheat. Another derives it from Puelle, 'young wood', in memory of a forest that covered the site in the 17th and 18th centuries. The land was exploited before the Revolution, then abandoned, before the vine reclaimed its rights. In any case, this low-relief terroir, exposed to the south-east at around 250 metres altitude, presents sandy and particularly well-draining soils composed of gravel and brown-red limestone, a substrate that ensures regular and early maturity of Pinot Noir, gives the wine roundness, richness and abundant fruit, and produces that style of immediately appealing and accessible Savigny. The domaine's vines, around 50 years old, are farmed biodynamically with constant rigour.

Tasting profile

The colour is dark cherry with purple hues, bright and showing fine intensity, the warm and generous 2022 vintage lending remarkable colour depth. The nose is expressive and immediately appealing: aromas of fleshy red fruits, morello cherry, dark cherry and ripe strawberry, emerge generously, accompanied by a light peppered and spicy note characteristic of Pinot Noir, plus fine woody notes perfectly integrated from the ageing. With aeration, hints of blackberry and preserved raspberry enrich the bouquet. On the palate, suppleness and elegance assert themselves at once: the attack is fruity and full, the texture velvet and silky, the tannins present but of remarkable fineness and refinement, from extraction conducted with delicacy. The fruit has reached on this sandy terroir complete maturity that translates to generous, full substance, lifted by natural freshness that brings balance and length. The finish is long, fruity and lightly spiced, with that ripe strawberry and sweet spice return that marks great Peuillets at maturity. Drink with pleasure from today, or keep until 2030-2032.

The domaine

The Girardin family has been established in Burgundy since 1570. Justin Girardin, thirteenth generation, took the reins of the 17-hectare family domaine in 2012 from his father Jacques, brother of the celebrated négociant Vincent Girardin. Enriched by experience abroad and in other French wine regions, he returned to Burgundy with a resolutely modern vision: wines closer to terroir, vinified with indigenous yeasts, with gentle extraction, pre-fermentation cold maceration for five days, rare punchdowns in favour of frequent pumpings, and ageing of fifteen months in Allier and Vosges oak with only 22% new wood. His philosophy is simple and profound: let nature express itself as much as possible, intervene with minimum force and maximum precision. Bottling takes place on favourable lunar days.

Food pairing

This Savigny-lès-Beaune 1er Cru Les Peuillets will pair beautifully with roasted milk-fed lamb with herbs, duck with cherries, veal in morel sauce, grilled duck breast or eggs poached in burgundy wine sauce. It will also find excellent harmony with soft-paste cheeses such as Brie de Meaux, aged Camembert or Reblochon. Served between 16 and 17 °C, with light decanting advised for younger vintages, it will reveal all the fruity generosity and natural elegance of a great Premier Cru of the Côte de Beaune.
