Crisp red fruits, subtle spice and floral notes. A precise, elegant Bourgogne from Pataille, supple, fresh and genuinely approachable.
The Bourgogne Pinot Noir 2022 from Domaine Sylvain Pataille is far more than an introduction to the domaine's style, it is a signature in its own right. The estate reveals its full mastery of ageing in this pure and sculpted Pinot Noir. A wine of real emotion. This red Bourgogne sums up the spirit of this great vigneron from Marsannay in a single bottle: precision, purity and absolute respect for the terroirs of the Côte de Nuits.

Terroir and vines

This red Bourgogne comes from old Pinot Noir vines located at the entrance to the Côte de Nuits, near Marsannay, planted across a mosaic of argilo-calcareous and marly soils of remarkable geological diversity. The average age of the vines is around 50 years, with some parcels dating back to 1956, giving this regional cuvée a depth and concentration rare for a generic Bourgogne appellation. This diversity of climates and soils, red clays, limestone and marls, allows the domaine to extract a perfect balance between aromatic depth and fruit energy. Viticulture is certified organic and biodynamic, with deliberately limited yields to concentrate the fruit. Hand-harvested, vinified with 0 to 15 per cent whole bunches depending on the parcels, fermentation with indigenous yeasts, gentle extraction. Ageing takes place on fine lees in oak for 15 to 18 months, with only 15 per cent new wood to preserve the purity of the fruit and expression of terroir without ever masking it.

Tasting profile

The robe is a bright, translucent ruby, luminous and vivid. The nose opens onto succulent notes of small red and dark fruits, wild strawberry, cherry and wild berries, accompanied by rose petals and violet, as well as peony, with disarming delicacy and finesse. With aeration, the wine develops notes of grey pepper and subtle sweet spice, reinforcing its aromatic complexity while remaining faithful to the domaine's precise and sculpted style. On the palate, the texture is full of energy and silky, carried by fine tannins and fresh, well-integrated acidity. The palate is supple and harmonious, of crystalline purity that favours finesse and precision over power. The finish is long, driven by red fruit and a chalky, saline note directly inherited from the calcareous terroir of Marsannay, with great persistence.

The domaine

Born in Marsannay-la-Côte to a non-winemaking family, Sylvain Pataille studied oenology in Bordeaux before returning to champion the terroirs of the Côte de Nuits with passion. He founded his domaine in 1999 with just one hectare on lease, settling permanently in 2011, and patiently built a 17-hectare vineyard certified organic since 2008 (Ecocert) and managed biodynamically. Sylvain accords fundamental importance to ageing in oak, pursuing optimal quality in his wines.

Food pairings

This Bourgogne Pinot Noir pairs beautifully with pork loin in a cep crust, shallots confit in Pinot Noir with reduced mustard jus, hare ravioli with tarragon and truffle emulsion, roasted poultry with morels, or a board of aged cheeses such as Époisses or Comté. Served between 15 and 16°C, lightly decanted if tasted young, it will reveal all the fruity finesse, mineral depth and absolute elegance of a Pinot Noir from old vines signed by one of the most precise and sincere figures of the Côte de Nuits.
