The Bourgogne Pinot Noir Symbiose 2023 from Domaine Hubert Lignier is the entry point into the domaine's range, and one of its finest surprises: a cuvée created in 2020 at Laurent Lignier's initiative, who leased four small parcels across three different communes in Côte d'Or to craft this generous and moreish blend. Delicious red fruit texture with redcurrant, cherry and wild strawberry, a Bourgogne that far exceeds its rank through the precision and rigour of its winemaker.

Terroir and the four parcels

The name Symbiose captures the philosophy perfectly: the harmonious union of four complementary terroirs from communes of remarkable diversity and prestige for a generic Bourgogne. Les Durots in Meursault brings roundness and the natural richness of Beaune's clay soils. Charvet and Sorbin in Pommard contribute structure, depth and the characteristic spices of this commune, renowned for its fleshy Pinots. La Croix Blanche in Vosne-Romanée brings floral finesse, aromatic precision and the chalky minerality that defines this mythic terroir. This geographic and geologic diversity, combined with the respectable age of the leased vines, gives rise to the remarkable complexity and balance of this cuvée for its appellation level. Three separate fermentation vats, one per significant terroir, with 20% whole bunches according to the parcel. Two new oak barrels out of twelve total, respecting the domaine's philosophy: measured oak in service of terroir and fruit. Aged 18 to 21 months on lees without filtration or fining.

Tasting profile

The robe is a luminous ruby with violet hints, bright and lively. The nose is juicy and appetising from the moment it opens: tart red berries and tension, redcurrant, wild strawberry and fresh cherry, underscored by a light touch of anise and sweet spices. With aeration, the natural roundness from the Pommard parcels and the floral finesse of Vosne emerge progressively in remarkable balance and harmony. On the palate, the wine is supple and juicy, with fine breadth and precise structure that give substance without heaviness. The texture is clean and stony, with a wet stone minerality that unfolds into a fairly long and fresh finish. A very tasty Bourgogne as Jasper Morris would say, to be enjoyed with immediate pleasure and without ceremony.

The domaine

Hubert Lignier founded the domaine in the 1970s in Morey-Saint-Denis. Following his death in 2004, his brother Laurent took over from 2006. The estate comprises 11 hectares of organically certified vines since the 2019 vintage, with an average age of 50 years. The philosophy remains constant: creating authentic, sensual wines that express their respective terroirs. The Symbiose cuvée, created in 2020, embodies Laurent Lignier's curious and generous spirit, unafraid to lease parcels beyond his Morey stronghold to enrich the range with a Bourgogne of remarkable gourmandise and sincerity.

Food pairings

This Bourgogne Pinot Noir Symbiose pairs beautifully with roasted poultry with herbs, rabbit braised with wild mushrooms, œufs meurette, Burgundian jambon persillé, fresh pasta with summer truffles or a board of soft cheeses such as young Époisses or Brie de Meaux. Served between 14 and 16°C, lightly chilled, it will reveal all the fruity gourmandise and natural precision of a Bourgogne signed by one of the most principled and admired winemakers of the Côte de Nuits.
