The Savigny-lès-Beaune Les Gollardes 2023 from Domaine Justin Girardin is a bottle that intrigues as much as it seduces — a Pinot Noir from an exceptional and discreet terroir, tucked at the far northern edge of the Savigny-lès-Beaune vineyard, whose singular geographical configuration and fascinating etymological history make it one of the most compelling lieu-dits of the Côte de Beaune. Roundness, volume and sour cherry: these are the words Justin Girardin himself uses to sum up the essence of this elegant and delightful wine.
The terroir of Les Gollardes
Les Gollardes is a climat situated at the extreme north of the Savigny-lès-Beaune vineyard, in a unique and very particular topographical configuration. The relief forms a natural funnel between the Beaune mountain, the Rhouin valley and the Vauteloy and Barbauron combes — and it is precisely from this "funnel" shape that the lieu-dit takes its name: gole and its diminutive gollot mean in Old French the bottleneck, the narrowing, the narrow passage. Another medieval theory evokes the gol, a lower-quality grape variety banned by Philip the Bold at the same time as Gamay in 1395, whose trace has been lost. This hillside terroir is cold and swept by winds permanently due to its funnel configuration — which gives it natural coolness and lively acidity that are the signature of its wines. The south-west exposure counterbalances this coolness, bringing roundness and richness to a naturally taut wine. At the surface, the soil is clayey with limestone gravels, resting on a vast limestone slab subsoil that forms a cornice — a substrate that gives the Pinot Noir remarkable minerality and structure. The vines, farmed biodynamically, are harvested manually with triple sorting in the vineyard and on vibrating table.
Tasting profile
The colour is ruby red with purple reflections, bright and of fine intensity. The nose is expressive and refined, immediately seductive: aromas of sour cherry, raspberry and sharp cherry dominate with elegance, accompanied by floral notes of violet and light spicy touches. On the palate, roundness and volume assert themselves at once as the signature of this terroir: the attack is fruity and supple, the texture velvety and generous, the tannins of remarkable finesse and delicacy, from an extraction conducted gently — rare punchdowns in favour of frequent pump-overs, respecting the grape variety and vintage. Fresh, well-integrated acidity brings tension and definition to a generous and full wine, and the finish is long, fruity and distinguished, extending gracefully over notes of red fruits and sweet spices. A wine of pleasure and elegance, accessible from now in all its generosity and destined for fine evolution over four to six years.
The domaine
The Girardin family has been established in Burgundy since 1570. Justin Girardin, thirteenth generation, took the helm of the family domaine of 17 hectares in 2012 from his father Jacques — brother of the celebrated négociant Vincent Girardin. Since then, he has continuously questioned his practices to bring vineyard and wines to their full potential, transforming wines of traditional style into vibrant, precise and modern cuvées, faithful to the identity of each terroir. His vineyard, spread from Santenay to Savigny-lès-Beaune via Chassagne-Montrachet, Pommard and Meursault, is farmed biodynamically with complete rigour and conviction. Fermentations occur with indigenous yeasts, with macerations of 15 to 20 days and 12-month ageing in oak barrels with very measured use of new wood — always to preserve the purity of fruit and truth of terroir in every glass.

This Savigny-lès-Beaune Les Gollardes will pair beautifully with roasted poultry with herbs, rabbit with mustard, grilled or roasted meats, lamb tajine with olives or country terrine with pistachios. It will also find fine harmony with soft cheeses of mild flavour such as Brie de Meaux, Tomme de Savoie or aged Reblochon. Served between 16 and 17 °C, it will reveal all the roundness, volume and fruity elegance of a Côte de Beaune Pinot Noir of great sincerity.
