During maturation, the heavier and oilier nature of traditional pot still spirit absorbed the spiced and ginger notes from the casks, while the lighter and fruitier column still distillate took on soft honey aromas. Filey Bay Bourbon Cask Reserve reveals a fruity and delicately spiced aromatic profile with flavours of honey and caramel.
