Bourgogne Aligoté Pariot 2023 Domaine Clément Lavallée

Based in the Yonne, Domaine Clément Lavallée brings out the calcareous terroirs of northern Burgundy with a precise and respectful approach. The Pariot cuvée comes from Aligoté parcels planted on clay-limestone soils, favouring a straightforward, fresh and intensely digestible expression of the variety.

The luminous and well-balanced 2023 vintage reveals all the natural vitality of Aligoté. Vinification in tank and work on fine lees preserve the aromatic brightness and tension, without masking the purity of the fruit.

The colour is pale and brilliant with green reflections. The nose opens onto frank notes of lemon, green apple and crisp pear, accompanied by a floral touch and a slightly iodised nuance. On the palate, the attack is lively and energetic, driven by a beautiful structuring acidity. The finish is clean, saline and particularly refreshing.

Serve around 8–10°C. Perfect as an aperitif, it pairs beautifully with oysters, shellfish, jambon persillé or fresh goat cheese. Best enjoyed within 3 to 5 years to appreciate its full freshness and dynamism.
