The Bourgogne Aligoté Pariot 2024 from Domaine Clément Lavallée is one of the most striking and convincing expressions of Aligoté you can find, proof that this variety, too often confined to Kir and modest blends, can achieve remarkable complexity, minerality and freshness in the right hands and on the right terroir. Far removed from the rustic reputation unfairly attached to this grape, meticulous vineyard work and careful winemaking bring genuine elegance to this wine.

The terroir and vineyard

This compact 0.22 hectare parcel, planted in 1980, sits just outside the village of Saint-Bris-le-Vineux. Though small, it holds clay and limestone soils of Kimmeridgian age, the perfect setting for Aligoté. The Chablis terroir imparts a distinctive chalky minerality. The grapes are modest in size but strike a perfect balance between sugar and acidity, a mark of these old vines that self-regulate naturally for very low yields. The 2024 vintage, marked by remarkable freshness across Burgundy and the Auxerrois, shows particular promise for whites, with preserved natural acidity and grapes of such aromatic purity and tension that Clément describes them among the finest he has vinified. In the cellar, fermentation happens with wild yeasts and no sulphur additions throughout, with dual ageing in stainless steel and used oak. The wine moves by gravity alone, never by machine or pump.

Tasting profile

The 2024 vintage brings striking tension and vivacity to this Pariot, true to its crystalline, precise character. The colour is pale yellow with green glints, bright and clear. The nose offers immediate frankness and purity: fresh citrus, green lemon and grapefruit, delicate herbs and white flowers emerge naturally, joined by the chalky minerality of Kimmeridgian terroir. On the palate, the acidity is lively and well-integrated, the texture sharp, almost chalky, with natural saliva and a lemon and salt finish that is this Pariot's absolute signature. Dry, fresh and pure, it closes on a long, cool finish that calls for the next sip. An Aligoté to drink now in all its vivacity, capable of lovely evolution over three to five years.

The domaine

Born in 1987 within Saint-Bris's winemaking tradition, Domaine Grand Roche took root when Erick Lavallée planted his first vines on the Grand Roche lieu-dit. Since 2021, his children Caroline and Clément continue the family story with passion across 14.5 hectares between the Auxerrois and Chablis. After studying viticulture and oenology and spending eight years at Armand Heitz, Chapoutier and Château Margaux, Clément returned to Saint-Bris with a clear vision: straight, pure wines without pretence, born of respectful viticulture and minimal intervention winemaking.

Food pairing

This Bourgogne Aligoté Pariot pairs beautifully with fine oysters, a seafood platter, salt cod brandade, grey shrimps in butter, Burgundian snails or fresh goat cheese. It also makes a characterful Kir Bourguignon, in the convivial and direct spirit that defines this cuvée. Serve between 8 and 10°C to reveal all the mineral freshness, chalky precision and vitality of an Aligoté made to restore honour to an underestimated grape.
