Bright and zesty, with citrus and fresh minerality. Chateau de Chamilly's precise Aligoté is taut, saline, and thoroughly refreshing.
The Bourgogne Aligoté 2025 from Château de Chamilly is a lively, mouth-watering Aligoté from old vines. The house believes that Aligoté should cut across the tongue, awaken the palate, and make you salivate. To know a good Aligoté is to know Burgundy. A fresh, dynamic white wine for the aperitif or the table.
Terroir and vines
This cuvée blends two terroirs equally: 50 per cent from Chamilly and 50 per cent from Buxy. The vines, averaging 70 years old, cover 1.5 hectares of clay-limestone marl soils, south-facing, between 260 and 360 metres altitude. Average yield stands at 55 hl/ha, yielding around 14,000 bottles. Grapes are harvested and transported in small-volume containers. Settling occurs 12 to 24 hours after pressing. Controlled-temperature fermentation and ageing take place in tank to preserve freshness, followed by filtration at bottling.
Tasting profile
The colour is pale and bright. The nose shows floral and mineral notes. The palate is fine, crystalline and dynamic, a dry, fresh, well-balanced wine with a lively, mineral finish that calls for another glass.
The domaine
Château de Chamilly, built in the 17th century, stands at the heart of a verdant valley in northern Côte Chalonnaise, twenty minutes south of Beaune. Owned by the Desfontaine family since the 19th century, it is run today by brothers Xavier and Arnaud alongside their mother Véronique, across some thirty hectares spanning the Bourgogne, Bouzeron, Montagny and Mercurey appellations. They vinify each parcel and climat separately, combining organic farming with biodynamic practice.
Food pairings
Drink this Aligoté neat as an aperitif or with a platter of oysters and shellfish, or pair it with crustaceans, charcuterie, or mild cheese. It is also traditionally enjoyed with a splash of Dijon blackcurrant liqueur, as a Kir. Serve well chilled, between 10 and 12 °C, and drink it in its youth.
