Chablis 2023 Domaine Clément Lavallée
At the heart of the Chablis vineyard, Domaine Clément Lavallée cultivates its parcels on the typical Kimmeridgian soils, rich in marls and marine fossils. This unique geology gives the wines their characteristic tension and the emblematic mineral signature of Chablis. Vineyard management and vinifications are conducted with precision to preserve purity and balance.
The 2023 vintage, luminous and well-balanced, showcases a straight and expressive Chardonnay. The ageing, principally in stainless steel to preserve freshness and aromatic clarity, highlights the natural finesse of the terroir.
The colour is pale gold with green glints. The nose reveals frank aromas of lemon, green apple and fresh pear, accompanied by delicate floral notes and a touch of iodine. On the palate, the attack is lively and precise, supported by fine tension and chalky minerality. The finish is clean, persistent and saline.
Serve around 10–11°C. It will accompany oysters, shellfish, grilled fish or fresh goat's cheese beautifully. Best enjoyed within 5 to 8 years to fully appreciate its freshness and evolution towards greater complexity.
