Chablis 2023 Domaine Clément Lavallée

At the heart of the Chablis vineyard, Domaine Clément Lavallée tends its parcels on the typical Kimmeridgian soils, rich in marl and marine fossils. This unique geology gives the wines their characteristic tension and the mineral signature emblematic of Chablis. Vineyard management and winemaking are conducted with precision to preserve purity and balance.

The 2023 vintage, luminous and balanced, showcases a straight and expressive Chardonnay. The ageing, mainly in tank to preserve freshness and aromatic clarity, highlights the natural finesse of the terroir.

The robe is pale gold with green glints. The nose reveals frank aromas of lemon, green apple and fresh pear, accompanied by delicate floral notes and a briny touch. On the palate, the attack is lively and precise, supported by fine tension and chalky minerality. The finish is clean, persistent and saline.

Serve around 10–11°C. It pairs beautifully with oysters, shellfish, grilled fish or fresh goat cheese. Best enjoyed within 5 to 8 years to fully appreciate its freshness and evolution towards greater complexity.
