White flowers, citrus, hazelnut and striking minerality in Burgundy's greatest white. From Domaine Pavelot, broad and precise, built to age.
The Corton-Charlemagne Grand Cru 2022 from Domaine Pavelot is the domaine's absolute white jewel and one of the most engaging and honest expressions of this legendary Côte de Beaune Grand Cru. This is a finely balanced cuvée, poised between richness and freshness, a wine with serious ageing potential. The archetype of great white Burgundy. Often reserved in youth, the texture alone promises a long future, silky and lingering with a thread of minerality and salinity running through.
Terroir and vineyard sites
Three parcels in Pernand, facing west in En Charlemagne, and a fourth at the heart of Charlemagne on the Aloxe border, oriented directly south. Soils range from deposits of pure, silky, light clay to a limestone base resting on marl, rarely suffering from water stress. This soil diversity, combined with multiple exposures, is precisely what gives Pavelot's Corton-Charlemagne its particular complexity and balance. The west-facing parcels capture afternoon sun warmth, bringing roundness and ripeness, while the south-facing parcel contributes power and mineral depth. Harvest is by hand. Grapes travel in traditional wicker baskets. Whole bunches are lightly crushed before pneumatic pressing. Ageing takes place in lightly toasted barrels, for maximum expression of fruit and terroir without excessive oak interference.
Tasting profile
The colour is a fairly deep gold with silver glints and a brightness speaking of freshness and youth. A nose of richness and finesse, combining buttery, brioche and fruit notes with discreet white pepper and mineral touches. Suave and honeyed on the attack, the wine becomes more mineral on the finish. Beautiful finesse on the nose, with white flower, linden and spice aromas. The palate is quite broad, with lovely fat and a certain vibrancy, discreet oak and light citrus notes. A nose opening onto white flowers, almonds, even a hint of menthol. Great capacity to age before reaching its peak after 5, even 10 years in bottle. In the generous 2022 vintage, fruity richness and aromatic concentration combine with the characteristic salty minerality of the terroir for a wine of remarkable depth and harmony.
The domaine
Domaine Pavelot is run by Luc and Lise, brother and sister of the seventh generation on a family domaine that existed already in the 17th century. They work today 9 hectares across Pernand-Vergelesses and Aloxe-Corton appellations. Their work is guided by a single thread, the health of soils, vines and wines. A genuinely interesting domaine, whose wines are particularly charming while maintaining reasonable prices.
Food pairings
Roasted lobster or sautéed scallops reveal the full richness of Corton-Charlemagne. Turbot in beurre blanc or sea bass en croûte de sel beautifully complement the wine's minerality. Bresse chicken with cream or veal with morels elevate the wine's balance. Aged Comté, Beaufort or Brillat-Savarin pair perfectly with the roundness and complexity. White truffle risotto or mushroom scramble showcase the wine's oak notes. Blanquette de veau or tarragon chicken are equally classic and distinguished pairings. Serve between 12 and 14°C with 30 minutes decanting recommended. It will gradually reveal the full richness, salty minerality and depth of a grower Corton-Charlemagne, signed by one of the Côte de Beaune's most steadfast families.
