The Pernand-Vergelesses Blanc Les Combottes 2023 from Domaine Rapet Père et Fils is one of the most engaging and little-known cuvées from this historic domaine, a delicate, lively and elegant Chardonnay from a high-altitude parcel that Vincent Rapet himself replanted in the early 2000s on vertiginous slopes that no one else had dared to cultivate. A wine carved from stone and freshness, which reveals with each vintage, with remarkable faithfulness and precision, what a steep combe in Pernand-Vergelesses can offer at its purest and most mineral.

The terroir of Les Combottes

The name of the climat is itself a geographical description: combottes is a diminutive of combe, the Burgundian term for a small valley carved into the hillside, and speaks directly to the rolling and enclosed character of this parcel. Situated in the extension of the village of Pernand-Vergelesses, at a relatively high altitude for the Côte de Beaune around 350 metres, the Les Combottes hillside faces full south-west and presents a slope so steep that it requires planting vines in short rows, with genuine inter-row ditches to prevent erosion. Considerable labour, which few vignerons would accept today. The soils are composed of light white marls rich in calcareous aggregate, with clays in the deeper layers whose capacity to retain moisture proves invaluable in dry, sunny vintages. This marly terroir, well-exposed and at an altitude that preserves the natural freshness of the grapes, gives the Chardonnay a delicate, mineral and taut character that sets it distinctly apart from the more opulent whites of the Côte de Beaune. Vinification is careful and respectful, with small-crate harvesting to keep grapes intact, gentle pneumatic pressing over two hours, 24-hour cold débourbage, fermentation in barrels with 30 per cent new wood, then ageing on lees with regular stirring until July before bottling after twelve months of ageing.

Tasting profile

The colour is pale gold with golden hues, fresh and limpid. The nose is refined and elegant, with immediate sophistication: aromas of fresh fruit, green apple, pear and white peach, blend with delicate floral notes, subtle spices and hints of honey and beeswax. A flint minerality marks the marly-calcareous imprint of the terroir and announces the beautiful evolution that awaits this wine with a few years of ageing. On the palate, the wine is lively, well-balanced and naturally tense, with fresh and precise acidity, silky elegant matter and a long mineral finish that leaves an impression of purity and straightness inviting you to the next glass. A delicate and refined wine, at its best between 2025 and 2031.

The domaine

Domaine Rapet Père et Fils is one of Burgundy's oldest and most respected wine families, a tastevin engraved with "Rapet" dating from 1765, carefully preserved at the domaine, testament to two and a half centuries of uninterrupted presence in Pernand-Vergelesses. Today led by Vincent Rapet and his son Robin, the domaine extends over 20 hectares across the finest terroirs of northern Côte de Beaune, Pernand-Vergelesses, Aloxe-Corton, Savigny-lès-Beaune and Beaune, as well as several parcels of Corton-Charlemagne Grand Cru. Certified at level 3 Haute Valeur Environnementale by the Ministry of Agriculture and undergoing organic conversion, the domaine produces straight, balanced wines full of freshness, true mirrors of their terroirs. The Bettane & Desseauve Guide awards it five stars, emphasising that no wine in the range disappoints, even in difficult vintages.

Food pairings

This Pernand-Vergelesses Blanc Les Combottes pairs beautifully with sole and salmon blanquette, terrine of fish with fresh herbs, sea bass grilled with fennel, steamed scallops, tarragon-roasted poultry or quality sushi. It will also harmonise well with soft cheeses lightly aged, such as Chaource or semi-dry goat cheese. Served at 12°C, it will reveal all the freshness, delicacy and minerality of a high-altitude Chardonnay, signed by one of the most reliable houses of the Côte de Beaune.
