L'Abricot du Roulot is the sunniest and most generous liqueur in the range of Domaine Jean-Marc Roulot, a confidential batch of just a few hundred bottles, crafted in Meursault as part of a family distilling tradition that stretches back to 1866. Behind the winemaker universally recognised as one of the absolute references for Chardonnay worldwide stands a precise and patient liqueur maker, bringing to the fruit the same care and rigour he applies to his Meursault Premier Crus. With L'Abricot, it is the orchard sunshine that finds its way to Burgundy.

The fruit and its production

Apricot is one of the most temperamental and demanding fruits for artisanal liqueur making. Its window of ripeness is narrow, its perfume intense and fleeting, and the balance between natural sweetness and acidity possesses a complexity that only the most attentive craftspeople know how to preserve and reveal. The fruit selected by Jean-Marc Roulot, picked at perfect ripeness from carefully chosen orchards, is macerated in alcohol with the precision that characterises every production from the domaine. The fruit expresses itself without excess, with great gustatory truth. The palate offers a subtle balance between sweetness, freshness and intensity, avoiding any heaviness and allowing elegant, digestible tasting. Tasting profile

The colour is a luminous gold with warm amber and orange reflections, generous and welcoming, announcing the richness and directness of the fruit. The nose is striking in its immediacy and generosity: ripe apricot asserts itself with full character, over notes of fresh, juicy fruit, apricot blossom and sweet almond, with a subtle hint of honey and dried fruits evoking sun-dried apricot. This aromatic complexity, at once fresh and candied, is precisely what distinguishes a great artisanal liqueur from industrial production: the dual nature of apricot, simultaneously lively and deep, tart and sweet, expresses itself here in full truth. On the palate, the attack is round and generous, carried by natural, controlled sweetness that quickly gives way to apricot's delicate acidity, bringing freshness and balance to a silky, well-structured texture. The domaine

Jean-Marc Roulot is one of the most admired and respected figures in Burgundy, heading a domaine founded in 1830 in Meursault and recognised worldwide as one of the absolute references for Chardonnay, alongside Coche-Dury, Leflaive, Comtes Lafon and Raveneau. Since 1989, he has managed his 16 hectares in biodynamics with constant rigour. But Jean-Marc Roulot is also, by family heritage, a distiller and liqueur maker. The tradition traces back to his great-grandfather in 1866, and the domaine's still continues to produce, in minute quantities, spirits and liqueurs of a precision and sincerity that naturally extend the domaine's identity. The complete range of Roulot liqueurs, including Mirabelle, Griotte, Abricot, Framboise and Poire, is produced in limited quantities in an artisanal spirit that guarantees each batch absolute quality and directness.

Tasting and food pairing

L'Abricot du Roulot is best enjoyed neat, lightly chilled between 10 and 12°C, in a liqueur glass or tulip glass. It pairs beautifully with warm apricot tart, almond and apricot financier, yellow fruit crème brûlée, white chocolate and apricot moelleux, or citrus panna cotta. It can also be enjoyed as an aperitif, over crushed ice with a splash of sparkling water for a summery long drink full of sunshine, or a few drops over vanilla ice cream for a simple, sumptuous dessert.
