The Savigny-lès-Beaune Premier Cru Aux Serpentières 2020 from Domaine Michel Gay is one of the flagship bottles from a domaine counted among the most serious references of the Côte de Beaune. Rated 90/100 by Robert Parker on previous vintages and awarded 3BD by Bettane & Desseauve, this Premier Cru reveals on the sunny 2020 vintage all the depth, elegance and charm of an exceptional mid-slope terroir, brought to life by the precision and rigour of Sébastien Gay.

The terroir of the Serpentières

The climat Aux Serpentières is said to take its name from the springs that wind down from the hillsides beneath this parcel, or perhaps from the undulating terrain evoking the movement of a reptile on the slope. Situated at the entrance to the village of Savigny-lès-Beaune coming from Beaune, on south-facing slopes at around 260 metres altitude, this Premier Cru is among the finest and best-exposed in the appellation. The soil comprises light Bathonian limestone marls scattered with angular stones, over an argilo-calcareous base that allows Pinot Noir to develop deep roots and express beautiful mineral richness. The south-facing exposure is a precious advantage in this Côte de Beaune vineyard, ensuring optimal grape ripeness, particularly in warm vintages, and giving the Serpentières wines greater depth, flesh and generosity than most of their appellation neighbours. Wine specialist Clive Coates MW described this group of Savigny Premier Crus as wines "with style rather than raw power" – a description that fits perfectly what Michel Gay draws from them.

Tasting profile

The colour is a deep cherry with purple glints, luminous and intense, reflecting a sunny 2020 vintage and fine generosity. The nose is immediately seductive and expressive: aromas of raspberries, ripe plums and black cherries open onto notes of cocoa, sweet spices and violet, with fine, well-integrated oak from ageing in French oak barrels. On the palate, the wine is ample, fleshy and charming, with generous fruit and a silky texture evoking the signature of the Serpentières. The tannins are polished and elegant, the succulent acidity brings freshness and tension, and the finish is long, fruity and lightly spiced. A Premier Cru that is both accessible now and promising for six to ten years' cellaring.

The domaine

Founded in 1992 by Michel Gay, Domaine Michel Gay et Fils is today run by Sébastien Gay, fourth generation of a winegrowing family established in Chorey-lès-Beaune for over a century. The vineyard extends over fifteen hectares spread across several prestigious appellations – Chorey-lès-Beaune, Savigny-lès-Beaune, Aloxe-Corton, Beaune and Corton Grand Cru. Viticulture is conducted on reasoned principles, without herbicides, with mulching and reincorporation of prunings to maintain soil health. In the cellar, vinifications are traditional and minimalist: cold prefermentative maceration, fermentation with indigenous yeasts, gentle extractions, and ageing in French oak with 40 to 70 per cent new wood for Premier Crus, for around 16 months. Rigorous selection on the vine and on the vibrating table guarantees the quality of each harvest. Bettane & Desseauve awards the domaine 3BD, praising the precision of terroir expression and the remarkable mastery of ageing.

Food and wine pairings

This Savigny-lès-Beaune Premier Cru Aux Serpentières pairs magnificently with roasted duck with cherries, beef fillet en croûte with mushrooms, rack of lamb with Provençal herbs, pheasant in a casserole or game birds. It will also find excellent harmony with aged pressed-paste cheeses such as 18-month Comté, Époisses or Cîteaux. Served between 15 and 17°C, with a 30-minute decant recommended, it will express all the generosity and depth of its great terroir.
