White fruits, sweet spices, and subtle minerality. Precise and digestible Burgundy from Pataille, supple, fresh, and remarkably approachable.
The Bourgogne Blanc Les Méchalots 2023 from Domaine Sylvain Pataille is one of the most compelling and precious Chardonnays that the Côte de Nuits produces under a regional Bourgogne appellation. Pataille proves that major Burgundy can come from a minor address, in the words of Jancis Robinson. Les Méchalots is luminous, fruity, and mineral, carried by an elegant texture and delicate freshness, an atypical style for the Côte de Nuits that recalls certain wines from the Mâconnais, and illustrates Sylvain Pataille's ability to produce white Burgundy cuvées that blend immediate brightness with ageing potential.
Terroir and the vineyard
The vines of Les Méchalots are planted on a parcel of approximately 0.3 hectares whose terroir is composed of glacial cone deposits from the last Quaternary glacial period, some 20,000 years ago: gravels, pebbles, and boulders originally from the plateaus and transported by ancient watercourses during successive freeze-thaw cycles accumulated at the exit of the combes. This exceptional and little-known glacial substrate is precisely the origin of the mineral tension, natural freshness, and aromatic complexity that distinguish this white Burgundy from any other expression of Chardonnay on the region's classical clay-limestone soils. The parcels lie at the northern and southern edges of the vineyard, on complementary clay-limestone soils, with the first vines planted in 1949. Viticulture is certified organic and biodynamic, with exclusively hand harvesting. Winemaking is gentle and respectful: very slow pressing with a vertical press over 5 to 7 hours, alcoholic and malolactic fermentation with native yeasts in old barrels. Ageing of 15 to 18 months in barrels with approximately one third new oak, to preserve the freshness and purity of the fruit and the minerality of the soils.
Tasting profile
The robe is a luminous pale gold with green highlights, limpid and crystalline. On the nose, Les Méchalots seduces from the first moment: notes of white flowers, linden, and yellow lemon combine with touches of fresh verbena, offering an immediate aromatic freshness of striking delicacy and precision. The bouquet evolves with aeration towards ripe yellow fruits, melted pear and white peach, and slightly smoky accents that echo the imprint of the cone's glacial pebbles from the terroir. On the palate, the texture is both fluid and energetic, with an immediate mineral tension that structures an elegant and precise substance. The fruit shines with grace, harmonising with a minerality of subtle chalky finesse. The acidity is lively and well-integrated, the finish fresh and persistent with remarkable length. Pataille strikes again, electric in the words of an enthusiast.
The domaine
In 1999, Sylvain Pataille founded his domaine in Marsannay-la-Côte with just one hectare of leased vines. Today his vineyard extends over 17 hectares. A tireless defender of Marsannay's terroirs, he is recognised as the vintner who restored the prestige of this long-underestimated appellation. His biodynamic practices, deliberately limited yields, and minimal intervention in the cellar produce wines of consistent delicacy and precision, unanimously praised by international critics.
Food pairings
This Bourgogne Blanc Les Méchalots pairs beautifully with first courses featuring vegetables in sauce, poached or grilled white fish, salt-crusted sea bass, white asparagus with mousseline sauce, steamed scallops, or aged goat's cheese. Served between 10 and 12°C, it will reveal all the mineral freshness, pebbly tension, and natural elegance of a Marsannay Chardonnay signed by the vintner who transformed this appellation into a Côte de Nuits reference.
