Crémant de Bourgogne La Sentinelle from Domaine Parigot is an emblematic cuvée that perfectly expresses the precise, refined style of this historic family house in Savigny-lès-Beaune. Renowned for its rigour and consistency, the domaine crafts crémants of great purity, drawing on meticulous grape selection and masterful command of the traditional method.
La Sentinelle is built primarily on Chardonnay, bringing finesse, tension and elegance, complemented in the blend by Burgundian varieties such as Aligoté or Pinot Noir. Extended ageing on the lees gives the wine a silky texture and subtle aromatic complexity, never heaviness.
The nose reveals delicate aromas of citrus, green apple and white flowers, with brioche and subtle toasted notes. On the palate, the attack is lively, carried by a fine and persistent bead, with lovely freshness and a clean, saline, deeply refreshing finish.
Versatile, this crémant works equally well as an aperitif or at table, paired with seafood, grilled fish, fresh cheese or refined light cuisine.
