Crémant de Bourgogne La Sentinelle from Domaine Parigot is a signature cuvée that embodies the precise, sculpted style of this historic family house in Savigny-lès-Beaune. Known for its rigour and consistency, the domaine crafts Crémants of great purity, built on careful selection of fruit and masterful control of the traditional method.
La Sentinelle is based primarily on Chardonnay, bringing finesse, tension and elegance, often complemented by other Burgundy varieties such as Aligoté or Pinot Noir, depending on the assemblage. Extended ageing on lees gives the wine a silky texture and subtle aromatic complexity, never overshadowing the profile.
The nose reveals delicate aromas of citrus, green apple and white flowers, alongside brioche and lightly toasted notes. On the palate, the attack is lively, driven by fine, persistent bubbles, with lovely freshness and a clean, saline finish that refreshes.
Versatile, this Crémant works as well as an aperitif or at table, with shellfish, grilled fish, fresh cheeses or light, refined cooking.
