A refined Blanc de Blancs from Domaine Didier Delagrange, with fine bubbles and crystalline freshness, showing the precise winemaking of this Volnay family.
The Crémant de Bourgogne Blanc de Blancs from Domaine Didier Delagrange is the festive and luminous expression of a Volnay winemaking family whose history spans six generations, and a valuable demonstration that mastery of Chardonnay extends far beyond the still wines of the Côte de Beaune. A 100% Chardonnay Blanc de Blancs with a touch of Aligoté, crafted in the traditional method with the rigour and precision that defines the domaine's entire range. A characterful Burgundian alternative to the grand Champagne houses, offering freshness and elegance that honour its terroir of origin.

The grape variety, terroir and winemaking

This Blanc de Blancs comprises 90% Chardonnay and 10% Aligoté, sourced from clay-limestone terroirs of the Côte de Beaune. Grapes are hand-harvested, continuing the domaine's philosophy of rejecting mechanical harvesting across its entire production. The traditional method vinification includes a first fermentation in temperature-controlled tank, blending of varieties, secondary fermentation in bottle for the prise de mousse, followed by 12 to 18 months ageing on fine lees in a temperature-controlled cellar before disgorging. This prolonged contact with fine lees is essential for developing the aromatic complexity and creamy texture characteristic of this Crémant. The dosage is set at 6 grammes per litre, in a Brut style that preserves the natural freshness and vivacity of the Chardonnay without heaviness.

Tasting profile

The colour is elegant and luminous, a pale gold with fine persistent bubbles that enhance its brightness. On the nose, freshness dominates with white flowers and citrus aromas of immediate delicacy and precision. Notes of lemon, pear and crisp green apple emerge naturally, accompanied by a subtle brioche character and fine hazelnut notes from the lees ageing. On the palate, the delicate mousse enhances the floral character, with a creamy and slightly unctuous texture from prolonged lees contact. The natural acidity of Chardonnay and Aligoté brings tension and liveliness to a balanced, elegant whole. The finish is fresh, clean and persistent, with a purity and lightness that invites the next glass.

The domaine

The Delagrange family has been winemaking in Volnay since the 15th century, with the domaine formally established in 1978. Didier and Hélène Delagrange took over the family vineyards in 2003, continuing a winemaking tradition rooted in the finest parcels of the Côte de Beaune. Since 2017, their sons Alexis, Benjamin and Arthur have joined the domaine, bringing the family's winemaking generations to seven. The philosophy remains constant, healthy soils, hand-harvested grapes, fermentation with indigenous yeasts and restrained ageing for wines that faithfully express the site and vintage, whether a great Premier Cru of Volnay or a festive Crémant.

Food pairing

Traditionally served as an aperitif, this Crémant de Bourgogne pairs beautifully with cooked white fish, seafood and shellfish. It complements fine oysters, smoked salmon blini, steamed scallops, fish terrine with herbs and Comté gougères. Serve at 8°C to reveal the floral freshness, fine bubbles and natural elegance of this Burgundian Crémant from one of the Côte de Beaune's most engaging winemaking families.
